We've come across some great websites that teachers should explore for possible use this year.  Let us know how you like them!

  • On LinkedIn you will find an excellent Culinary Educators Network which boasts thousands of contributors.  "The group exists as a support center for culinary educators.  Here you can share all that you please with others who are experiencing the same things you might be experiencing yourself in your Program."  A couple of discussions recently had to do with the value of a culinary arts education in the job market as well as the definition of "gourmet" food and even a posting on a donation of thousands of reference books. 
  • www.HellaWella.com  is another interesting site to complement your nutrition discussions.  Recently they had articles on Edible Flowers and "This is what 200 calories looks like." You will need to subscribe to receive their weekly newsletter.
  •  www.PeanutAllergyFacts.org  is a new website for foodservice professionals in schools and non-commercial operations designed to provide science-based information about peanut and food allergies, as well as links to resources about effective allergy management.
  • Looking for a FREE workshop on U.S. aquaculture?  Contact the National Aquaculture Association about their Culinary Education Workshops which are designed specifically for future chefs and food professionals.  The program uses interactive technology and students receive printed materials designed specifically for them.  There is no cost to the host institution.  More information about this program at naa@thenaa.net or www.thenaa.net.
  • The National Restaurant Association has issued "Bright Ideas," its first-ever sustainability newsletter which offers tips and tools to restaurant and foodservice operators on eco-friendly practices that save money, resources and help protect  the environment.  The newsletter is free of charge available by subscription only.  Go to http://conserve.restaurant.org/Bright-Ideas

HEALTH AND FOOD SEMINAR IN NEW ORLEANS

 

Join us the weekend of October 17-19, 2014 in New Orleans at the Goldring Center for Culinary Medicine at Tulane University to learn about the many aspects of health and food.

 

We will have presentations, panels, and break out sessions.  You'll be in the kitchen as well as re-tooling your curriculum.  You'll hear from doctors and chefs and your peers on what is being done and how it is being done across the country. 

 

One session is titled:  "Food as Medicine:  Collaborating to Transform the Health of the Nation."
