Colton Soelberg will be the CAFÉ Leadership Conference Keynoter on its Industry Outreach Day, June 21, in Salt Lake City.  He and his partner Joseph McRae have a family of foodservice operations in Utah:  Pizzeria 712, Communal, Mountain West burrito, Heirloom Catering, and Heirloom Cafeteria Company.  They are committed to crafting meals that are made to be remembered.  "We are a collection of individuals who care and work together each day to create meaningful experiences" is part of their philosophy.  It is their local ties that create this community of sharing that makes the Heirloom Group aware that they have a responsibility to friends, families, neighbors and associates.

 

Born in Provo Utah, Colton Soelberg spent his early working years as a busboy, quickly rising to the ranks of line cook. His first big leap came when he landed at the Sundance resort, known for its exceptional culinary offerings. From there he moved on to Inn on the Creek in Midway Utah and then to New York, where he worked as a cook at La Côte Basque. He also cooked at Le Petit Robert in San Francisco. Returning to Utah, he was named chef of the renowned Tree Room at Sundance. It was there he met Joseph McRae, the resort's pastry chef. The two eventually launched the Heirloom Group's first venture, Pizzeria Seven Twelve in 2007.

 

The CAFÉ Leadership Conference will begin on Thursday evening, June 19th with a reception at the State Capitol in Salt Lake City.  Friday, June 20th will be devoted to a peer-to-peer sharing of educational best practices for culinary/baking/pastry/hospitality programs.  Saturday, June 21st is all about connecting the foodservice industry with the foodservice classroom:  Keynoter Soelberg, an Industry Panel, InfoFair, and Trends Presentations will help attendees keep up to date on what they need to be including in their curriculum.

Wisconsin Cheese Externship Program, Summer 2014

 

Emmi Roth USA and Wisconsin Milk Marketing Board will once again be offering a Wisconsin Cheese Externship specifically for postsecondary culinary instructors.

 

Dates:   Externs arrive July 8; depart, afternoon of July 12

 

The Externship:  Over the four days, the six lucky instructors will be transported to Monroe, WI, for a cheese making deep dive and hands on cheese functionality session with chefs and cheese makers at Emmi Roth USA.  From there, they will then visit local cheese makers, a dairy farm, enjoy area restaurants and finish with a visit to the Dane County Farmer's Market.

 

The Rules: 

  • Contest is open to (U.S. 48 contiguous states) postsecondary instructors; 6 spots are available.  You must submit any sort of creative expression (poem, song, video, essay, recipe, picture, etc.) on WHY it is valuable to include cheese education in a culinary curriculum.
  • (Submitting instructors must be willing to have their applications used on the Emmi Roth USA Facebook page.)
  • You must submit your application no later than Monday, May 12th.  Participants will be notified if they are chosen for the Externship on or before May 23rd.
