In addition to the national speakers addressing issues regarding our future structure of higher education as well as MegaTrends in our industry, CAFÉ has arranged for two breakout sessions during the Deans and Directors Retreat in Chicago that address specific current challenges:
Education and training now firmly reside online, but the questions of its efficacy and appropriateness in the culinary arts still loom. This session will engage participants in the world of the Rouxbe Online Cooking School, a powerful next-generation learning platform already in use by tens of thousands of cooks around the world. This conversation will be led by veteran chef educator and food anthropologist, Ken Rubin, along with the founder of Rouxbe, Joe Girard.
The next session will focus on specific money-saving or money-generating ideas that have been put into practice by assorted hospitality programs to accomplish their identified priorities for their students, faculty and programs. They required varying degrees of effort on the part of the faculty and staff, but they all delivered exceptional results. “Resourcefulness in Funding Program Priorities: Proven Strategies for Doing More with More” will be led by Lindy Robinson from Johnson County Community College and Robert Garlough from The Culinary Group.
Did you get the notice about the Grand Cru Recipe Contest for postsecondary culinary arts students? There are also 50 free samples that will be provided to the first 50 instructor respondents to the contest posting. Sample will include up to 12 ounces of Roth Grand Cru Original (two 6 ounce exact weight cuts).
