stpattys_day3.jpg Do you have any St. Patrick's Day traditions? 

 

Here's what Erika thinks of when this holiday rolls around: "My cousin's birthday is on St. Patrick's Day, so it was always memorable when I was growing up. Like most holidays, I associate St. Pat's Day with fantastic food, including traditional corned beef, potatoes and cabbage. One of the surprising things about living in Washington is that corned beef is available in grocery stores year-round, so you can enjoy it more than once a year. Yum! 

 

My brother recently turned me on to one of my favorite new kitchen tools - a pressure cooker - and it makes fantastic corned beef in a fraction of the time it normally takes to boil. I like to cook mine in a stout beer rather than using water. And instead of boiling the traditional red potatoes, I cut mine into wedges, sprinkle with olive oil, kosher salt and fresh chopped rosemary and bake for 50-60 minutes in a 350 degree oven.

Paige likes this holiday as well! Here's what comes to mind for her: "I've always loved St. Paddy's Day! One of my favorite memories as a kid was a teacher that I had named Mrs. Klie in first and third grade. For St. Paddy's Day, we would come into our classroom and there would be little green footprints all over our desks and the floor. Papers would be strewn about and there would be candy hidden everywhere. It was a lot of fun :) Now as an adult, and with St. Paddy's being on a Monday, my boyfriend and I plan to enjoy some Boozy Guinness Ice Cream floats with some friends and maybe watch the old Sean Connery classic, Darby O'Gill and the Little People (best St. Patrick's Day movie ever!). I'll be wearing my favorite green sweater and green argyle socks for the day!"
