Pledge of Authenticity
Terra Firma is a real farm.  We grow 99% of the produce that goes into our boxes on our 220 acres of certified organic land in Winters.  If we do buy produce from other farms, it's almost always from a neighboring farm and we give them full credit in the box list.
The owners of Terra Firma  are involved in every aspect of making your boxes a reality:  walking the fields, planting the crops, selecting and checking what goes in the boxes and finally delivering them to you.  We eat the crops from our fields every day, just like you do.  Thanks for supporting our efforts and enjoying the food we grow.

THANKSGIVING IS COMING!

Yes, despite the never-ending Indian Summer of warm, sunny days, we are actually just two weeks away from Thanksgiving.  You should have already received an email detailing our Turkeyday week schedule, but in case you missed it, here it is:

Wednesday Boxes will be delivered at their normal day and time (with the exception of a few drop sites that are making special arrangements -- subscribers at those sites will be contacted directly).

Thursday and Friday boxes will be delivered on Tuesday.  We will make every effort to get the boxes to your site at the normal time, but you may want to give us a little leeway.

We understand very well that many of our subscribers will be out of town for Thanksgiving or have other plans.  If you are planning on cancelling your box for Thanksgiving week, you must do so by noon on Friday, November 21st.  Because of the compressed delivery schedule, we begin harvesting and packing items for your boxes on Saturday.  Credits will not be issued for cancellations occurring after the 21st.   Your understanding and cooperation  is appreciated.

Next week I will provide a Box List Preview for the Thanksgiving Boxes in the newsletter so that subscribers who are staying in town can plan their other purchases for the holiday.

Thanks,

Pablito

On the Farm and In the Boxes

We are having a hard time at Terra Firma keeping up with the incredible growth of our crops due to the abnormally warm weather that refuses to end.  Early November is always a busy time at the farm, but this year is just too busy.

Many of the varieties of vegetables we grow this time of year are bred for cold temperatures and low amounts of sunlight.  The sunny, 80 degree days and warm nights we are having are pushing the proverbial gas pedal to the metal on crops like spinach, arugula, kale, broccoli and cabbage.

On the one hand, it's much easier and faster for us to harvest crops when it's not wet and muddy every day.  But then there is the concern that we are blowing through months worth of veggies that we need to keep your boxes full through the winter -- if winter ever happens, that is.'

This fall is disturbingly similar so far to last fall, which was unusually warm right up until the brutal December freeze that wiped out a number our crops.  Plants can handle cold weather if they get acclimated to it slowly over a period of time, but not if it comes suddenly.

In the meantime, enjoy the lush, tender and abundant vegetables in your boxes today.

Recipe:  Spinach-Bok Choy Shitake Soup

This is a simple clear soup with lots of flavor.  You can make it more substantial by adding noodles and/or beaten eggs.

Soak 1 C. dried shitakes or other gourmet mushroom in 3 C. of hot water.  When they are soft, slice them thinly.  Reserve the broth.

Saute the mushrooms over low heat in 2 T. sesame oil with 2 minced cloves of garlic and 3 T. peeled, minced fresh ginger for 3 minutes.  Add the mushroom broth, 3 C. water, and 3 T. soy sauce.  Bring to a boil, then simmer for 10-20 minutes.

Meanwhile, wash 4 C. spinach leaves.  Separate 1-2 heads of baby bok choy and wash the individual stems and leaves.  Chop into bite-size pieces.

Dice 12 oz. tofu.

Add the greens and the tofu to the soup, stir and cook until the bok choy is just tender.  Add the spinach and 3 T. lime juice, turn off the heat and stir the leaves in to wilt.

Season with soy sauce, black pepper, and hot chile oil (if you like).
