Pledge of Authenticity
Terra Firma is a real farm.  We grow 99% of the produce that goes into our boxes on our 220 acres of certified organic land in Winters.  If we do buy produce from other farms, it's almost always from a neighboring farm and we give them full credit in the box list.
The owners of Terra Firma  are involved in every aspect of making your boxes a reality:  walking the fields, planting the crops, selecting and checking what goes in the boxes and finally delivering them to you.  We eat the crops from our fields every day, just like you do.  Thanks for supporting our efforts and enjoying the food we grow.

Recipe: Sweet Potato Hushpuppy Salad
These are cooked in the oven.  The crunchy puppies are the perfect contrast to the red cabbage salad and the tahini dressing.

For the salad:  Cut 1 head of red cabbage in half, then finely shred one of the halves.  Grate 3 carrots.  Remove the stems from 1 bunch of cilantro and chop the leaves.  Toss the vegetables together.

Make a dressing with 2 T. tahini, 3 T. lemon juice, and 1 t. soy sauce.  Add cayenne pepper to taste and more lemon juice or water if the dressing is too thick. Toss with the salad ingredients.

Bake 1 large or 2 small sweet potatoes whole in the oven at 350 until tender.  Scoop out the flesh.

Clean and dice 1 leek to make 2 T.

Sift together 1/4 C. each corn and white flour with 1/4 t. each salt and nutmeg.  Mix in 1 T. sesame seeds.

Beat 2 eggs, then add the flour and leeks.  Once the batter is formed, add 1/2 C. sweet potato and mix well.

Heat the oven to 450.

Grease a cast iron skillet or baking sheet.  Drop the batter onto the surface 1 T. at a time, leaving space between.  Turn the hushpuppies once or twice with a tongs while baking to brown evenly.

Serve the hushpuppies on a bed of cabbage salad or toss them in.  If you like add crumbled feta cheese to taste.
