SERVES 2

1/3 cup packed cilantro leaves, roughly chopped

1/4 cup fresh lime juice

1/4 cup extra virgin olive oil

1 Tablespoon honey

1/2 teaspoon chili powder

salt and pepper

1/2lb jumbo shrimp, peeled and deveined

10oz chopped romaine lettuce

1/2 cup shredded red cabbage

1/2 cup grape or cherry tomatoes, halved

1 avocado, chopped

coarse sea salt (optional)

blue corn tortilla chips, crushed


Directions
1. Combine the first six ingredients in a food processor or blender then process until smooth. Place shrimp in a plastic bag then add 3 Tablespoons of the dressing and marinate in the refrigerator for 10 minutes (no longer.) Reserve remaining dressing for salad dressing.
2. After the shrimp have marinated, spray the bottom of a skillet with extra virgin olive oil or nonstick spray then saute in two batches to avoid overcrowding the pan, for 1-2 minutes a side, or until just barely cooked through. Set aside to cool slightly. Discard remaining marinade.
3. Divide lettuce and red cabbage between plates then top with avocados, tomatoes, sauteed shrimp, and crushed tortilla chips. Sprinkle with sea salt, if desired, then drizzle dressing on top and serve.

March is National Nutrition Month
History of National Nutrition Month

The first National Nutrition month was established in 1973
with a presidential proclamation, TV and radio public service announcements, news releases, and bumper stickers, all featuring the theme "Invest in Yourself-Buy Nutrition." From the beginning, National Nutrition Week was enthusiastically embraced by American Dietetic Association (ADA) members as an opportunity to promote the profession as well as to serve as a vehicle for delivering nutrition education messages to the public.

In 2009 the Oliver Foundation was instrumental in working with Mayor Bill White who proclaimed Houston Registered Dietitian's Day, March 11, 2009.

Houston was one of the first cities in the country to have a proclamation by the Mayor to honor Registered Dietitians.

The American Dietetic Association, the world's largest organization of food and nutrition professionals, officially changed its name to the Academy of Nutrition and Dietetics January 1, 2012.
"The Academy of Nutrition and Dietetics has been in existence since 1917 as the American Dietetic Association, after working to feed the troops healthfully during World War I. Protecting the public's health is the highest priority of the Academy and our members, and our new name complements our focus: the nutritional well-being of the American public," said registered dietitian and Academy President Sylvia Escott-Stump (2011-2012).
 
The official title is now Registered Dietitian Nutritionist or RDN and the Professional organization is the Academy of Nutrition and Dietetics.

Meet the Oliver Foundation Teen Advisory Board
The Oliver Foundation Teen Advisory Board is a 12-18 member organization represented by students across the Houston area. 
Each month you'll meet a different member who will share their perspective on living a healthy life.  

Annika Gandhi, Event Coordinator
Clements High School - Sugar Land, Texas 
Board Member 2014-Present

Annika is a senior at Clements High School. She is a scholar and a
member of her school's DECA chapter, competing twice at the national level. She is a member of the school choir. Annika enjoys cooking, reading, and exercising.




Rodeo Tips:
As a Houston based organization, we at the Oliver Board Foundation love to celebrate occasions quintessential to the Houston culture! One of the biggest events is, of course, the Houston Rodeo, which spans through most of March this year. The Rodeo is filled with exciting and fun activities such as carnival games, music concerts, livestock shows, and, most notoriously, the food. A large majority of the food at the rodeo is deep fried and therefore loaded with an excess of fat and calories.

Although a deep fried cheesecake, Twinkie, or Oreo may be tempting, make sure to keep in mind that what may taste good in the moment will come back making you feel worse later on. To put it into perspective, one serving size of deep fried Oreos at the rodeo is 890 calories, 50 grams of fat, and 109 grams of carbohydrates! If you are insistent on having an indulgence, make sure to only buy one and split it between your entire party. 

Portion sizes at the rodeo tend to come like everything else in Texas- BIG. Portions at the Midway are two to four times the normal size, which should be approximately the size of a fist or palm of the hand. 

Instead of fried potatoes or a corn dog for your main meal, opt for the roasted meats, preferably white meats, and vegetables that come straight off the grill. These options are more fresh and lean than anything coming out of the deep fryer. A great tip is to check if your plate has some color to it, and not just the same brownish beige of batter and potato.

Another important thing to mention is to skip the alcohol! Especially when your caloric intake is already skyrocketing from the foods, washing them down with a beer or margarita only makes the situation worse. 

Make sure to keep walking and running to burn off those carnival foods, and have a great time!
