Rotisserie Chicken Naan Pizza
An indian-inspired naan pizza with a sweet mango-tomato sauce, spinach, queso fresco and cheese. Simply delicious!
INGREDIENTS
- 1 (14-1/2 ounces) can fire-roasted dice tomatoes with juices
- 1/2 cup mango chutney
- 2 (4-1/2 ounces each) whole-grain naan breads
- 1 cup shredded Just BARE� Rotisserie Chicken
- 1 cup fresh baby spinach leaves
- 1 cup (4 ounces) crumbled queso fresco cheese
- Coarse salt and freshly ground pepper to taste
INSTRUCTIONS
1. Heat oven to 400˚F. Line a large baking sheet with parchment paper. Mix tomatoes and chutney in a medium saucepan. Bring to a boil; reduce heat and simmer over low heat about 15 minutes or until thickened. Cool 5 minutes.
2. Meanwhile, place naan on prepared baking sheet. Spread sauce over naan. Top with chicken, spinach, and cheese. Season with salt and pepper.
3. Bake 10 to 15 minutes or until edges are golden brown and cheese is melted.

It's February and time to evaluate your New Year's resolutions to eat healthier and exercise more. Plus its American Hearth Month, many of the same guidelines apply. Hopefully you made great progress in January, so let's get a plan for February since the month is filled with food (mostly unhealthy) related events: Fat Tuesday and Marti Gras, Super bowl (a food and beverage day long event) and Valentine's Day noted for chocolates and special dinners. Then for Houstonian's the Rodeo and all its supersized fried foods starts March 1.
Yes you can be successful during the shortest month of the year, you need to plan. Here are five easy ideas.
1. Write down your plan for the month. If you fail off for one day- just jump back on your plan the next day.
2. When you don't have time for the full workout- instead of skipping entirely, do a short version so you maintain the habit. 15- 20 minutes is better than nothing at all. Pus it keeps your heart healthy.
3. Make sure you eat healthy, lower calorie foods before you go any of the above events so you are not hungry when you arrive. If you arrive hungry to the Super Bowl party, you will most likely over do it on chips, dips, high calorie drinks and fried finger foods. Remember to put all the food you eat on a plate so you actually see how much you are eating- fill it ONCE!
4. As always, drink plenty of water each day, at your events and meals.
5. Fill up on fresh fruit, vegetables and leafy greens.

The Oliver Foundation Teen Advisory Board is a 12-18 member organization represented by students across the Houston area.

Emily Mueller St Agnes Academy- Houston, Texas Teen Board Member 2013 - Present
Emily is a junior at St. Agnes Academy. She is a member of the varsity golf team and an active member of Young Republicans at St. Agnes, as well as
student council. She is treasurer of The Teen Huddle of Hope for Three, an autism awareness group in Sugar Land. Emily enjoys bow hunting and hanging out with friends. She is very active in volunteering at her church and in the community.

Healthy Super Bowl Tips from Emily:
One of America's biggest unhealthy eating days is coming up just in time to break those New Year's resolutions. Our coffee tables will be cover with fried goodness and greasy fingers will get all over the couch with eyes glued on the TV. Yes, it's Super Bowl Sunday. From previous experience, I know the feeling of regret after eating chips and wings for three hours straight so this year it's time for something new. Here are some alternative snacks to cut those football frenzy calories.
- Sweet Potato Skins- Following along the same guidelines of the fan favorite potato skins, these are sure to be guilt-free. Substitute the potato for fiber-filled sweet potatoes and add some homemade guacamole to give it a bit of sweet and savory.
- Fruit Skewers - These are simple to make and add healthy natural sugars to your snacks rather than processed sugar that are found in cookies or cakes. Just cut up some of your favorite fruit and put on skewers. Top with mint, or dip in low fat flavored yoghurt.
- Healthy Chicken Wings- Yes, there is a thing. Start by boiling the wings to knock off some of that unhealthy fat, then instead of frying, broil the wings with your favorite red sauce. Four of these broiled wings will end up being only 150 calories all together! Even less if you pull off the skin.
- Zucchini Bruschetta- Instead of using a thick piece of bread, chop up a zucchini and add some fresh tomatoes and a drizzle of olive oil then throw into oven just like you would with bruschetta. After they are roasted, top with your bruschetta tomato topping.
- Spinach and Artichoke Dip- Instead of loading it with cream cheese, sour cream, and mayo, I blend white beans in place of the high fat ingredients. Plus a couple tablespoons of toasted sesame seeds to get the same creaminess and crunch in a much healthier way. Blend in steamed spinach and artichoke hearts and add a pinch of salt and garlic, you have a great healthy alternative. Pair with some whole grain baked tortilla chips.
