Recipe
Roasted Chickpeas

INGREDIENTS:

2 15 1/2-oz BPA-free cans chickpeas (aka garbanzo beans), drained and rinsed
1 tbsp olive oil
1 tsp minced garlic
1/2 tsp sea salt
Fresh ground black pepper, to taste
1/2 cup grated Parmesan cheese

INSTRUCTIONS:

Spread chickpeas on several layers of paper towel and let dry for 30 minutes.
Preheat oven to 400�F. In a medium bowl, combine oil, garlic, salt and pepper. Add cheese and stir until crumbly and oil is absorbed. Add chickpeas and toss to coat.
Spread on a baking sheet and bake for 45 to 50 minutes, until golden and crispy.

Makes: 2 1/2 cups
Hands-on time: 10 minutes
Total time: 55 minutes (plus drying time)

Nutrients per serving (1/4 cup Garlic Parmesan Roasted Chickpeas): Calories: 118, Total Fat: 3 g, Sat. Fat: 1 g, Monounsaturated Fat: 1 g, Polyunsaturated Fat: 1 g, Carbs: 15 g, Fiber: 3 g, Sugars: 1 g, Protein: 6 g, Sodium: 202 mg, Cholesterol: 4 mg

Food Trends for 2016 
This is the first year that there has NOT been a one hot- top food of the year.  2014 was Kale, 2015 was everything Cauliflower - wow did the prices of Cauliflower increase.  We were even using it to make pizza crust. 
 
For 2016 the trends are leaning toward Hawaiian and Filipino with Poke (move over sushi) spam and seaweed salad as leaders followed by Filipino foods, other Ethnic cuisines and spices, brined and fermented foods and bitter flavors. 
 
Vegetables are also taking center stage - as entrees and as "unpasta" such as zucchini, asparagus, carrots spiral cut in place of pasta. Remember zucchini squash- easy to cook and a great pasta replacement, just bake and spoon it out with a fork.
 
We will also see healthier kids meals in restaurants! YEAH- as our teen board would say.
 
New cuts of meat- that could get confusing to consumers.
 
More ancient grains and the return of bread. We will also see more food trucks, house made sausages and pickles in restaurants. Plus a goal toward NO waste food production at home and in restaurants. 
 
There will be more locally produced beer, wine and spirits, which is great news for the Texas economy and producers.  Texas is making a statement in the US and world economy.  "Crafted beverages will be even more prevalent in 2016.
 
Artisan ice cream with flavors like burnt honey rosemary - bacon, egg and cheese.  Having said all of that- there is also a return to basic foods and cooking!  Hurrah!!  Plus healthy fast casual and of course many new restaurants. 
 
Cheese is not on the list this year. Sorry cheese lovers.

2015-2020 Dietary Guidelines Released
The U.S. Department of Health and Human Services and Agriculture released the 2015-2020 Dietary Guidelines on January 7, 2016.  Making small changes in food choices can add up to big health benefits and help prevent diet-related chronic diseases.

Meet the Oliver Foundation Teen Advisory Board
The Oliver Foundation Teen Advisory Board is a 12-18 member organization represented by students across the Houston area. 
Each month you'll meet a different member who will share their perspective on living a healthy life.  

Joyce Chen, President
Elkins High School - Sugar Land, Texas 
Teen Board Member 2013 - Present

Joyce is a senior at Elkins High School. She serves as the President of Student Council, the Editor-in-Chief of the school newspaper, and the Vice President of Generation Youth Humanitarian Organization. Joyce is also a National Director at the Project for Better Journalism. In her spare time, she enjoys reading and trying new  Student Council, the Editor-in-Chief of the school newspaper, and the Vice President of Generation Youth Humanitarian Organization. Joyce is also a National Director at the Project for Better Journalism. In her spare time, she enjoys reading and trying new street foods.



Healthy Tips from Joyce:

After an unseasonably warm Christmas, it's gotten cold again- meaning that for a lot of us, getting out for a run or heading for the gym may seem that much more unappealing. Fear not, however: in 2016, there's technology to help you stay fit and healthy even in your own home.
 
-Some people have found activity trackers like Fitbit to really help them monitor and increase their daily activity levels. They're much more high-tech now and can log the calories burned, heart rate, and meals from calories. Even simple things like knowing precisely how many steps you're taking can awaken your sense of competition to try to one-up yourself, day after day!
 
-Want to save some money on a gym membership or Pilate's lessons? YouTube is your friend, with popular workout channels like Blogilates showing you just how to condition or dance to Zumba. Fun videos of "Just Dance" will help younger kids get moving, too.
 
Most importantly, it's much easier to meet your New Year fitness goal if you find a form of exercise you enjoy, whether it's dancing, swimming, yoga, or just taking a walk.
