Chef Mary Ellen
graduated with high honors from the   "Le Cordon Bleu" program of the California School of Culinary Arts. After an internship at the Los Angeles Times  Food Section, Mary Ellen created Personal Touch Gourmet, a boutique catering company and taught cooking classes around the South Bay and Los Angeles.

Several years later a call from the Los Angeles Times beckoned her back into the test kitchen with the position of "Recipe Tester." Over the course of her tenure, Chef Mary Ellen wrote articles and developed  recipes, several winning "Top Ten Recipe of the Year Awards."

I am officially an "empty nester" now that my daughter has moved out and is getting married next month!  But I clearly remember the pressure of a full time job and trying to prepare a healthy weeknight dinner.  Not easy even for a chef!!!  Our first group cooking class later this month will help all busy people with kids or not put a meal on the table in less than an hour.  We will also talk about time saving shopping and prepping tactics to prepare multiple meals at one time.  All recipes kid tested and approved.

End of Summer Favorites
"Heirloom Tomatoes"

Roasted Heirloom Tomatoes
 

A few months ago my friend Anne told me about a recipe she served at a recent party.  Sounds so simple... had to try it. I added a few Thai chili's for a little heat and a a handful of pitted Kalamata olives. This is recipe is perfect now with tomatoes at their peak, but will still be delicious year round. 

 

Roasted Cherry Tomatoes, Olives and Feta

With Grilled Crostini

 

1/4 cup extra virgin olive oil

1 pint assorted colored cherry tomatoes

½ cup pitted Kalamata olives

6 whole peeled garlic cloves

2 dried Thai chilies

2 sprigs fresh oregano

2 sprigs fresh basil

4 ounce block Greek Feta

 

Heat oven to 375 degrees.

Combine all of the ingredients except the feta in a baking dish, turning to coat the tomatoes and olives with oil.  Bake for 25-35 minutes or until tomatoes are starting to shrivel and oil is bubbling.  Remove from oven, place feta in the center and cover with olive oil and tomatoes.  Bake 5 minutes until feta is soft.  Serve with crostini.

 

Crostini

1 French baguette, thinly sliced on diagonal

olive oil

Kosher salt

 

Brush both sides of bread with olive oil and sprinkle with salt.  Grill, broil or bake bread slices until crusty and golden.  Serve with roasted tomatoes. 

 

"In Season Now...Figs"
Fig jam pizza

 

Figs, one of my favorite fruits comes into season twice in Southern Cal early in June then again the end of August and lasts through September.  Make a double batch of the fig jam and freeze to enjoy all winter with your favorite cheeses.

 

  I first tried a fig pizza at Todd English's restaurant "Olives." Had one of those WOW bites that rarely happens to a chef.  I loved the sweet figs, salty prosciutto and tangy blue cheese on the flatbread pizza.  At home, I came up with my own version of fig jam.  The recipe was included in a fig story that I wrote for the Los Angeles Times several years ago. Check out former Test Kitchen Director Donna Deane's version of the fig newton.
