(Un)happy MealI am very concerned about the fact that my four-year-old refuses to eat anything. I have tried everything from disguising the food to bribing him and nothing works. Unfortunately, my pediatrician does not have any advice to offer except to be patient. I know that he does not have a problem with the textures of the food so I don't know what else it could be. It's A Fiesta!

If you love the guacamole served at Rocco's Tacos as much as we do, then you're in luck! Just in time for Cinco de Mayo, Rocco has shared his often imitated but never duplicated - until now - recipe for guacamole with JustAskBoo Palm Beach. Gracias, Rocco!
Rocco's Guacamole 
Ingredients:
2 whole avocados
1 tablespoon roasted green poblano chiles, peeled, seeded and chopped
1 tablespoon jalapeno, diced (or to your taste)
1 tablespoon red onion, minced
1 tablespoon cilantro, chopped
1 teaspoon salt
1/4 of one lime
2 tablespoons fresh tomatoes, chopped
Directions:
In a bowl with a wooden spoon mash the scooped meat of the avocado to a rough puree. (Do not use a food processor as this will liquefy the avocados too much making a runny guacamole). Next stir in all of your ingredients. Adjust the seasoning to taste. Serve with fried tortilla chips for scooping.
As a bonus, here's another recipe perfect for pairing with the guacamole. These recipes are sure to be a hit at any Cinco de Mayo celebration and will have your guests asking for más.
 Rocco's Tacos Margarita
2.5 oz Milagro Silver Tequila
1.5 oz Triple Sec
4 oz fresh sour mix
Salt rim, shake well, pour over ice, garnish with a lime
