A Hopping Good Time

Here's a list of egg-citing Easter activities that are sure to have the kids jumping with joy (or from the sugar rush). So, when you're ready to take a break from dyeing eggs, grab a basket and and find an egg hunt. Whether by water, land or even flashlight, there's something fun for everyone. Happy Easter Egg Hunting!

 

  • The Village of North Palm Beach is sponsoring a traditional egg hunt, an underwater egg hunt and a flashlight egg hunt, March 29 at 6:15 PM and 8:00 PM and March 30 at 9:00 AM.
  • Celebrate Easter in Gilded fashion at the Flagler Museum where children will hunt for more than 7,000 eggs and have their picture taken with the Easter Bunny.
  •  For a morning filled with egg hunting, bounce houses, face painting and arts and crafts, don't miss the Town of Jupiter's Annual Easter Egg Hunt, March 30, 9:30 AM - 11:30 AM.
  • Palm Beach Gardens residents and their guests can search for eggs at the City of Palm Beach Gardens Egg Extravaganza, March 30 at 9:00 AM.

A Level Playing Field

The play area is currently filled in with grass, mulch and dirt, which is hard on their shoes, clothing, and even their sinuses. Sweet and Savory

Whether you are observing the final days of Passover or preparing your Easter brunch, here are two great recipes that are sure to be a hit with your family and friends. You'll definitely want to save room for seconds!

Chocolate Caramel Matzo Crunch aka Matzo Crack

Ingredients:

4 to 5 pieces of Matzo
1 cup dark brown sugar, firmly packed
1 cup (2 sticks) unsalted butter
1 cup chopped bittersweet chocolate, or semi-sweet chocolate chips
Toppings, as desired

 

Directions:

Preheat oven to 375 degrees F. Line a baking sheet with aluminum foil and/or parchment paper. Place one layer of matzo on the baking sheet, breaking it if necessary to fill the pan completely. Set aside.

 

In a large sauce pan, melt the butter and brown sugar over medium heat, stirring constantly. Once the mixture reaches a boil, continue to cook for an additional three minutes, still stirring, until thickened and just starting to pull away from the sides of the pan. Remove from heat and pour over the matzo, spreading an even layer with a spatula.

 

Place the pan in the oven and immediately turn the heat down to 350 degrees F. Bake for 15 minutes or until the toffee bubbles up and turns a rich golden brown color. If it looks like it is starting to burn, turn the heat down to 325 degrees F.Remove from the oven and immediately sprinkle chocolate over the pan. Let sit for five minutes to melt, then spread evenly with a spatula. Cool completely, then break into smaller pieces and enjoy! Makes approximately 30 pieces. 



Easter Egg Bake

"My mother-in-law's bacon, egg and cheese casserole is easy to whip up for Easter brunch and will have everyone asking for more!" ~Chae Haile, JAB Miami North Editor

Ingredients:
½ pound bacon, diced
½ sweet onion, chopped
4 eggs, beaten
2 cups frozen hash brown potatoes, thawed
1 cup cheddar cheese, shredded
¾ cups Swiss cheese, shredded

¾ cups cottage cheese

 

Directions:

Preheat oven to 350 degrees F. Grease a 9 x 9-inch baking dish. In a large skillet, over medium heat, cook bacon and onion approximately 10 minutes, drain. Transfer bacon and onion to a large bowl and stir in remaining ingredients. Pour mixture into baking dish and bake approximately 45 minutes or until eggs set and cheese browns. Let stand 10 minutes. Enjoy!
