If you could share your experience and recommend a great club, I would appreciate it. Fast Food

For all you JABBERS who have healthy living on your minds, here's a healthy and delicious recipe for quinoa and scallops shared with us by fellow JABBER and healthy fare guru, Rebecca Hidalgo. Personally tested by Lissa Dorsey, JAB Palm Beach editor (and foodie) as well as her family, this dish is fresh, fast and fantastic! Ready in 15 minutes, this meal will have everyone in your family (even the kids) asking for seconds. Enjoy!
Ingredients
1 cup dry quinoa
2 cups water
1 tablespoon, plus 2 teaspoons olive oil, divided
1/2 lemon
1/8 teaspoon salt
1/8 cayenne pepper
1/4 cup chopped red onion
1/2 pound sea scallops
1 cup shoepeg corn
1 cup halved grape tomatoes
1/4 teaspoon dried basil
Boil quinoa and water in a pot over high heat. Reduce heat and partially cover, until water is absorbed, about 10 minutes. In a small bowl, mix 2 teaspoons olive oil, lemon juice, salt, and cayenne pepper. Set aside. In skillet over medium-high heat, add remaining 1 tablespoon olive oil. Add onions and saute until tender. Add scallops and saute until golden brown. Add the corn and tomatoes and cook for five minutes. Add cooked quinoa and olive oil and lemon juice mixture into skillet. Stir until well blended. Sprinkle basil on top of mixture.
