"The impressive 1927 Pedro Ximenez Solera, from a Solera begun nearly 80 years ago, boasts a dark amber color as well as an extraordinary nose of creme brulee, liquefied nuts, marmalade, and maple syrup. Huge and viscous, yet neither cloyingly sweet nor heavy, it is a profound effort priced unbelievably low. It is meant to be drunk alone at the end of a meal." (WA)

The vineyards, located at an elevation of 1,050 ft., are comprised of the famous chalky soil called Albariza and the 40-year-old vines are trained in the goblet system and yield 1.25 t/acre (3 t/ha). The grapes were hand-harvested at the peak of maturity and dried on mats in the sun. This is one of the oldest wines in the cellar. The Solera was started at the beginning of the last century. Production: 300 cases for the U.S.

"This 2013 Pedro Ximenez de Anada wine is made from 100% hand-harvested Pedro Ximenez grapes that are dried on mats in the sun, and then fermented in stainless steel, with the fermentation being halted by the addition of liquor. It is then aged six months in 500-liter American oak barrels. A medium amber color is followed by notes of maple syrup, brown sugar, honeysuckle, Chinese black tea and marmalade. This sweet, rich, heady, after-dinner wine should drink well for a decade or more." (WA)

Molasses, spice, chocolate and pure raisins define this as classic P.X. It's syrupy but not too much so, with maple, cinnamon and brown sugar flavors. For a sweet and candied dessert wine, it has excellent balance and persistence. A star among many in this category; these wines are hard not to like. The name tells you all about this wine's origin: this sweet young wine is obtained through drying the Pedro Ximenez grapes on mats in the sun. The best way of bringing intense Andalusian summer sun to your table.
