Marquette Food Co-op has several vegan options at their deli. We dine in their cafeteria.

Honeybee Ecology

..."Honeybees cannot use the buzz pollination (the vigorous vibration used by bumblebees) necessary to efficiently pollinate tomatoes, eggplants, potatoes, peppers, blueberries, watermelon, and cranberries. Honeybees cannot fly at low temperatures (like the orchard mason bee) to efficiently pollinate early-spring blooms like blueberries, the first apple bloom and almonds. This is not to imply that honeybees are not used to pollinate these crops, just that other insects could do a much better job... Finally, focusing on honeybees as pollinators ignores the value of native pollinators and the fact that the presence of the honeybee harms them, as we shall see... There are many plant alternatives to Honey

 

Including maple syrup, agave nectar, stevia, brown rice syrup, barley malt, organic sugar, date sugar, andnew product called Bee-Free Honee.  Bee-Free Honee is a Minneapolis based company that is made from Michigan organic apples. Both City Green Market (in downtown Negaunee) and Marquette Food Co-op carry Bee-Free Honee. From Bee-Free Honee: "We need to find viable alternatives to help relieve the production demands off of the honey bee.  So, we have created a product called: Bee Free Honee� (BFH).  It works in equal proportions to traditional honey in cooking and in baking.  It tastes, acts, and feels shockingly like traditional honey... When people say they want to support bees by purchasing traditional honey, I have to politely ask; 'How does creating more demand help them?'  Does it not just push the industry to make them work the bee harder?"


Meat Industry Wins Right to Sell Tainted Meat by Michael Greger, M.D.

"I talked about a particularly virulent strand of Salmonella traced to Foster Farms. But while even Mexico banned the importation of Foster Farms' chicken on public health grounds, it was still sold in the United States. Why wasn't there a recall? How could Foster Farms continue to legally sell chicken contaminated with this virulent strain of Salmonella? It all goes back to Supreme Beef v. USDA, a court case in which the meat industry sued the USDA after they had the audacity to try to shut down a slaughter plant that was repeatedly found violating Salmonella standards. The meat industry won. The Federal Appeals Court ruled that it wasn't illegal to sell contaminated meat; what was illegal was the USDA trying to protect the public by shutting down the plant. Because normal cooking practices destroy Salmonella, the presence of Salmonella in meat does not render the meat "injurious to health." Salmonella-infected meat is thus legal to sell to the consumer... We can get infected no matter how well the meat is cooked though... Even though most people know about cross contamination, 1/3 don't even say they wash their cutting boards. Though awareness appears to be growing, even when people wash the cutting boards with hot soapy water we can still find Salmonella and Campylobacter (see Avoiding Chicken to Avoid Bladder Infections). Health Tip of the Month (finding ways to heal or to live naturally using animal-free/cruelty-free methods):

How to Sprout Grains, Legumes, or Nuts
Sprouting, also known as malting involves giving your grains, legumes or nuts, which are basically just seeds, a chance to germinate. Due to this I'm going to refer to grains, legumes and nuts as seeds from here on out. Germination is the process that the seed is designed for. During this critical time in the plant's life nutrients are released to aid the seed's establishment as a plant and the seed softens. During this time flavor compounds are also released. This flavorful, softened seed that's jam packed with nutrients is what we're after. This is a pretty stark contrast to flour which is unsprouted grains that have been ground into a nearly tasteless dust. For hearty breads, using finely milled sprouted grains like wheat, rye and spelt can be a much healthier and tasty option. It will make breads that are extremely dense and fibrous though so if you don't prefer those types of bread (which I jokingly refer to as rock and stick bread) you may want to explore the benefits of sprouting things like chickpeas for hummus instead. Marla Rose

 

 

Marla Rose is a writer, activist and community builder actively involved in Chicago's flourishing vegan movement. In 1998, she and her husband created the pioneering vegan web magazine,Vegan Street. In 1999, at the request of the "Mad Cowboy" Howard Lyman, Marla co-founded and headed the Chicago chapter of EarthSave International, eventually producing an annual event called The Conference for Conscious Living that drew dozens of vegan leaders to Chicago over the next decade. This event ultimately grew into the innovative and popular festival,Chicago VeganMania, which has drawn thousands over the last three years. Meanwhile, Marla co-founded the Chicago Vegan Family Network, which has grown into a group of dozens of families all raising vegan children. In 2009, Marla and her husband were recognized by Mercy For Animals as Activists of the Year.

In 2004, Marla published her first book, Marla's Vegan Guide to Chicago and the Universe. Soon after, she began her blog, Vegan Feminist Agitator. She is a freelance feature writer and has had her work featured in VegNews magazine, One Green Planet and the Advocacy for Animalsblog for Encyclopaedia Britannica, and has an essay published in the collection, This I Believe: On Motherhood. She also maintains two different columns for Examiner.com. Marla's work has been reprinted in the Utne Reader, and in 2010, she was nominated for a prestigious Maggie Award for best feature story.
