Why Veganism? By Eva Batt

Written in 1964 this is an essay that is right on with the vegan principles: "a way of living which avoids exploitation whether it be of our fellow men, the animal
population, or the soil upon which we all rely for our very existence."

Costa Rica Bans Hunting
"Costa Rica is set to be the first country in the American continent to ban recreational hunting after the country's legislature approved the popular measure by a wide margin..." Read More Here

Laura Theodore is the Jazzy Vegetarian
Both on radio and television, this all vegan cooking show is on many PBS stations coast to coast.  Please help make this show become apart of our local Public TV 13 programming by contacting them.  They always appreciate comments and suggestions.  Please send your suggestions to Public TV 13 at: [email protected] or phone them at: 906-227-1300 or toll free at 1-800-227-9668.  What a wonderful asset this show could be by teaching people the many ways to prepare and cook 100% plant-based dishes that are also super delicious!  How many times have we all heard how do you bake without using butter or eggs?  Let's try to bring Laura into our homes and show us all how this can be done so easily.  Bon appetit!

New Book Artisan Vegan Cheese by Miyoko Schinner
Books like this help us move along the vegan/plant-based journey, demonstrating how vegan cheeses can be delicious, gourmet, and much healthier than the dairy counterparts.  And because there is zero animal products in these recipes this also amounts to zero animal exploitation in the making and enjoying of these "cheeses".  More Info Here

Or Buy Some Vegan Cheese at the Co-op

Marquette Food Co-op sells a few vegan cheeses that are already made (warning: some so-called non-dairy cheeses have casein in it which is a milk product and therefore it is not vegan, please read ingredients, see if it is labeled vegan, or ask a staff member).  A favorite is Daiya Cheese. Daiya is all vegan and melts wonderfully. The mozzerella is awesome. For more info go to: http://www.daiyafoods.com/.

You can put Daiya cheese on your vegan pizza or make a vegan grill cheese sandwith with it.  It is awesome!

Dairy Cheeses are definitely not Vegan, but they are also not Vegetarian!

Most commercial cheeses are formed using rennet, the stomach lining of slaughtered calves, to coagulate the milk.

Highlight of the Month

Quote from Dr. John McDougall

McDougall

"Being vegan says to me this is a person with outstanding character. Vegans are self-sacrificing and committed to making a difference. When everyone else is certain that it is our God-given right to mistreat and kill cows, pigs, chickens, and fishes in order to be properly nourished; a vegan would rather risk protein and calcium deficiency than to harm these beautiful creatures. Of course, this deep sacrifice ends with the discovery that plants provide all needed proteins, amino acids, essential fats, vitamins, and minerals (including calcium) without the inherent risks of flesh and dairy. Vegans are self-confident. They remain steadfast even when mom, dad, dietitian, and doctor are visibly angered by their religion of "veganism." Vegans are industrious. To avoid eating animals in a world where beef, chicken, and cheese are mixed in with everything in the market and on the menu is a daily struggle. Reading labels, turning down invitations to dinner, and occasionally, going hungry, require more effort than the average person is willing to muster.

Obviously vegans are exceptional people. With this one simple shift to a starch-based diet the word "vegan" will become synonymous with terms like healthy, trim, active, young, strong, and energetic, and finally the most important adjective, earth-changing." ~ John McDougall MD
