Before I started working for Doug at the Farmers' market, I didn't even know that cows were grass-eating animals, let alone understand the importance of their stomachs.
Researching beef led me down a rabbit-hole of information about factory farming practices, and I soon realized that we are poisoning ourselves and poisoning the earth at an alarming rate.
I keep optimistic for many reasons, one of them being the miraculous capabilities of ruminant livestock like beef. Ruminants have the ability to mow, fertilize, and aerate soil in a way that promotes the growth of grass land. When managed properly to prevent overgrazing, a herd of beef will encourage roots to grow deep - sequestering carbon below the surface, and building rich topsoil. Feedlots operate at the complete opposite end of the spectrum - any fertilizer that is deposited into the land runs off into "lagoons" and carbon is released into the atmosphere.
The rich, ruminant-grazed topsoil supports a miniature universe of microbes and fungi. Mycelium, the spider web-like "roots" of fungi, have the ability to break down petroleum and other pollutants into non-toxic compounds, and it works in conjunction with the microbes deposited into the soil through manure.
It is very gratifying to be working for a company that restores topsoil, and provides nutrient-dense, healing food. I want to thank all of you for your support, and remind you that you are contributing to farming practices that are healing the earth.
