How do you like your eggs - Sunny-side up, over-easy, scrambled, or perhaps raw? Consuming eggs raw is an excellent way to take advantage of the nutrient-density of eggs without heating and oxidizing any cholesterol in the yolk. Just make sure that they are fresh and from healthy, pastured chickens of course.
One thing to keep in mind is that raw egg whites contain enzyme inhibitors and anti-nutrients that prevent the absorption of nutrients. One enzyme inhibitor prevents protein digestions, and one of the anti nutrients binds to the nutrient Biotin. Because of these enzyme inhibitors and anti-nutrients, I like to separate the yolk from the white and only consume the yolks when raw. The yolks are where the majority of the nutrients are.
What to do with all those whites? They can either be cooked lightly to neutralize the anti-nutrients, or they can be used to clarify a broth.

When I make bone broth, I simmer bones and vegetable scraps for 12 to 24 hours. I strain the broth and what's left in the end is a mineral and collagen-rich liquid with small bits of protein floating in it. One way of getting the stray protein out of the broth is to make an egg white "raft."
This involves whisking about 5 egg whites into the strained stock, which has been brought to a simmer. The egg whites will coagulate, rise to the top, and act as a filter - binding to the proteins in the broth. The broth is simmered for about an hour with the raft.
These practices (eating raw yolks and clarified broth) can be especially helpful for people who suffer from "leaky gut" syndrome. A leaky gut means that the lining of the small intestine is damaged, and strands of protein are "leaked" directly into the blood stream.
Eating only the raw yolks of eggs and using the white to remove potentially problematic proteins (say that five times fast) from the broth is an excellent way to get the most out of these two nutrient dense foods.
