Hey Folks,

What kind of oil do you cook with?

     Almost every meal I cook starts with oil and a hot skillet. Oil is an essential part of cuisine because it not only provides a medium for frying and saut�ing, but because it is a source of energy and a vehicle for fat-soluble vitamins.

There are many options. Some traditional fats include:

* Butter
* Ghee
* Lard
* Tallow
* Shmaltz (drippings)
* Olive Oil
* Coconut Oil

Some of the newer oils on the market are:

* Canola Oil
* Soybean Oil
* Corn Oil
* Shortening (Crisco)
* Margarine

Fats
Traditional fats - SonRise Pork Lard, Spring Hill Butter, and Organic Estate-Grown Enzo Olive Oil.

     With so many options, and a plethora of contradicting scientific claims about the health effects of these oils, how could anyone choose which fat to cook with?

I take the following things into consideration:

* How the oil is grown before it is extracted
o Are pesticides used to grow the plant/animal which oil is extracted from?
o Are oil crops grown using methods that deplete topsoil?
o Are the crops grown using genetically engineered seed?

* How the oil is extracted and refined
o Is the oil extracted using toxic chemicals such as hexane?
o Are the monounsaturated and polyunsaturated oils oxidized during extraction or refinement?
o Have the oils been hydrogenated, or chemically altered, to change the consistency of the product?

     Unfortunately, the answer is almost always "yes" for the newer oils on the market listed above. What's more is that these vegetable oils have replaced nearly all of the traditional fats in restaurants, packaged foods, and have even squeezed their way into products labeled as pure olive oil. 

     What this means is that I cook at home 99% of the time. And with the Linkery in North Park changing ownership, it is unclear what I'm going to do (hopefully they continue to fry their French fries in beef tallow). 

     The traditional fats almost always answer "no" to the questions posed above, as long as the animals are raised on healthy pasture, and the plants are grown organically. Devotees of the lipid-heart disease hypothesis will warn you about the lipid profiles in traditionally used animal fats, but good science and personal experience can vouch for the health benefits of the fat-soluble vitamins, non-oxidized cholesterol, and pure energy contained therein. 

     We are currently working with Lance Roll, the "flavor chef," to produce rendered beef tallow, pork lard, and lamb tallow from our pastured animals. Stay tuned, and for the moment...save your bacon fat. This week we are offering one free package of bacon with any order of $100 or more.

We fill all our web orders first, before we pack up on Fridays - so if you've had trouble in the past getting something... ordering on our new website will put you at the head of the line.

My Rewards

For each 100 points you earn you can receive $1 in credit towards SonRise Ranch products (to earn 100 points you must spend $20 online). Points are redeemable in 2000 point / $20 increments only. You can receive points for any purchase made through our web store or over the phone (excluding CSA and Quarter Beefs). Your point balance can be checked by logging into your online account under "Other Features > My Rewards".

 

Here's how it works:

 

1. Once you've placed your order and it has shipped, your MyRewards Points will be redeemable for your next purchase. Excludes CSA and Quarter Beef purchases.

 

2. To view your MyRewards, simply go to MyRewards. You can visit this page at any time through your web store account to review your points balance, under "Other Features > My Rewards".

 

3. Enter the total amount (in points) you'd like to redeem below (100 points = $1). Must be redeemed in increments of 2000 points / $20.00.

 

4. Once you click Redeem Now, you are now ready to save on your next purchase. Upon placing your order, your available MyRewards will automatically be deducted from the total purchase amount.

 

5. Purchases made using your MyRewards are ineligible to receive additional points.
