I hope you all had a wonderful Thanksgiving - the turkey was a success on my end!
After working at the farmers markets for a couple years now, I have learned a lot about where food comes from and what we should really be eating to stay happy and healthy. If you are like me, passionate about eating local, sustainable foods, then you probably try hard to share your knowledge with those around you. Many people I talk to have trouble seeing the benefit of going out of their way - and sometimes spending more money - for unprocessed, organic food.
Keep in mind that you are a powerful example! When I began eating produce from the farmers' markets, I started to feel more energetic and healthy. Many of my customers have shared dramatic stories of improved health as well, and it is inspiring to see people improving their well being by eating good food. My friends have noticed my good health, and they are always stoked when I cook them something delicious from the farmers' market. It is very fulfilling to be able to show people how good food is supposed to be.
A few years ago, I was regularly eating Mexican fast food with my friends - it seemed good at the time, but eating that way was certainly not improving my health. I have found that one of the best ways to introduce friends to real food is by cooking something that is familiar, so I decided to put together my own version of carne asada fries with farmers' market ingredients. My buddies may not have been too interested in the sustainability of proper grass-fed beef ranching, or the omega 3-omega 6 ratios in pasture raised animal fat, but they would definitely listen to a big plate of mexican food.
Here's what's in there: Organic potatoes fried in pastured bacon fat and grass-fed beef tallow, our grass-fed and dry-aged flank steak (I discovered that a lightly seasoned ground beef is just as good, if not better), pastured cow cheese from Spring Hill, salsa, and guacamole made with organic produce. This was by far the best plate of carne asada fries I have ever had - and it was nutrient-dense and loaded with good fats and protein! Try it out with your friends some time if you can stand to share it.
