Hey Folks,
Last week Steven mentioned some great points about the health benefits of Offal Meats (Organ Meats) from Grass-fed and Free-range animals. This week, I would like to talk about some specific aspects of Grass-fed beef liver.
Now, for beginners, without a detailed biology lecture, we all know the basic function of the Liver in the body - right? It filters toxins from the blood stream. This seems pretty important to me, and it is vital for the healthy function of the Beeves. I used to eat a ton of liver, right off the supermarket shelves. My wife would fix it with Onions, and a little Bacon - delicious!
That was before I really took any time to think about what a liver does, or more importantly, the environment the animal who has it is living in. When conventional (Non Grass-fed) beef is born, its owner is paid on the price per pound of hoof weight - so the object for him is to have the cattle gain as much weight as possible in the shortest amount of time. This usually results in Growth Hormones being added to the cattle.
Of course, a beef getting sick will result in weight loss, or very slow weight gain - and once again, the Rancher will likely treat any illnesses as soon as possible with some form of Antibiotics.
All those chemical are filtered by the liver - so you can get an idea of what you are purchasing when you buy conventionally raised beef liver, and we haven't even touched on what happens at the feed lot!

Grass-fed beef liver is different. During the life cycle of a grass-fed beef they are never given any hormones or antibiotics, simply because grass-fed beef doesn't get sick. Beef raised in confinement or under stress require medicine, because those environments are very unnatural, and result in illness that require treatment. Grass-fed beef are eating nothing but living grass, so their liver is loaded with omega-3, vitamins, and minerals that are not found in grain feeds - not chemicals, like the conventional beef!
