The Official Brewsletter of Appalachian Brewing Company
August 2015
The Craft Beer and Soda of Appalachian Brewing Company
Dear Friends,

Here we go again... The 'dog days' of summer are truly upon us. For many of us, that means just a few more weeks to squeeze in a well-deserved getaway with friends and family, or on our own, before settling back into the school daze or regular fall schedule.

While all of these things can be exciting -- it sure can be tough to put summer behind us!

At ABC -- we make this seasonal transition one to look forward to with the 18th Annual Capital City Beer Festival! This amazing event happens Saturday, September 12, 2015 at our Harrisburg brewpub. We're expecting 25 guest breweries for this world class craft beer gathering that also kicks off our Oktoberfest celebration.

Get your tickets online NOW -- before it's too late!

Or, you can purchase tickets at any ABC brewpub. Again, don't wait to secure a ticket to your preferred session -- and enjoy a great day of beer, food, music and friends!

As far as other exciting news within our company, our Appalachian Craft Soda brand was recently featured nationally on CBS This Morning! We are fortunate to be part of this growing trend as consumers seek out more natural, flavorful beverages. It doesn't hurt that our soda has a huge, loyal following here in Pennsylvania.

You can view the video further down in this Brewsletter.

Until next time, Cheers!

We're Building a NEW Brewpub!
ABC returning to downtown Gettysburg

After having to close the doors to our original "Battlefield" brewpub in Gettysburg earlier this year due to historic preservation efforts - we're back!

Earlier this month, ABC broke ground on our newest brewpub location, to be located along the expanding Steinwehr Avenue corridor on the south side of Gettysburg. This new space, complete with its own in-house small batch brewery, should be ready for visitors in spring of 2016.

Appalachian Craft Soda on National TV!
Pop's New Fizz is made in Central PA

Our Appalachian Craft Soda brand is growing bigger each week -- and apparently we're being noticed! Specials thanks to Vanita Nair from CBS This Morning, who made the trip from New York City recently to feature our products in this story about the rising popularity of craft soda nationally.

Look for our full line of Appalachian Root Beer, Diet Root Beer, White Birch Beer and Ginger Beer in more places than ever -- including regional Walmart, Wegmans, Weis Markets, Giant and Karns Food Stores!

Fresh Hops Are in the Tank!
Our annual trip to a local hops farm proves flavorful

Once again, Appalachian Brewing Company visited Dan Greenaway's hop farm in Lycoming County, PA this summer to collect some freshly picked buds!

Since starting with just 100 vines in 2010, Dan's crop has soared to 400 vines. He currently grows Cascade, Chinook, Newport and Zeus hop varieties.

ABC uses the fresh hops to brew our annual Greenaway Farm Fresh Hop Pale Ale, which should be available in the brewpubs in early September. This year, our brewers used 41lbs of Cascade and 11 pounds of Chinook hops in this brew, which continues its fermentation process at our Mechanicsburg brewery.

Once this Fresh Hop brew is on tap, drink it while you can -- because it won't last long! The freshness of the hops adds a delightful crisp and grassy characteristic our customers have grown to love since introducing this beer in 2011.

Get To Know: Executive Chef Kyle Mason
He's kind of a big deal in the kitchen

As our Corporate Executive Chef, Kyle is responsible for the overall operation of our various brewpub kitchens, managers and staff.

In addition, he is responsible for creating new and innovative recipes for the ABC menu, especially ones that pair well with our craft beer and soda.

"The beer is always great," says Kyle. "We just want to make sure food lives up to that same great reputation. We're way more than just typical bar food, and ABC customers have high expectations."

Prior to working for ABC, Kyle worked as the Executive Chef for the Radisson Hotel Harrisburg, where he led the kitchen staff in large banquet services.

He doesn't just flex his culinary muscles. Kyle was a collegiate athlete, where he wrestled for American University in Washington, DC. While there, he earned a degree in Psychology, but later discovered his passion for food.

"It turns out, a Psychology degree comes in pretty handy in the kitchen," jokes Kyle. "I get to work with a lot of colorful personalities!"

Kyle is also a craft beer enthusiast, and has experimented with home brewing. However, he mostly leaves it up to the professionals, and his favorite ABC brews are Hoppy Trails IPA and Outta Focus Double IPA.

"I enjoy bold flavors," says Kyle. "I really enjoy how the hops play out on your palate."

Kyle and his family reside in Mechanicsburg. When he's not working at ABC, he's coaching his son's youth wrestling team, working out, traveling and working on cars. This past year, Kyle began participating in competitive chili cook-offs, and is a member of the International Chili Society.

If you see Kyle around your favorite ABC brewpub, be sure to say hello -- or bon appetit!

August's Featured Show
Anthony D'Amato
August 14 | 9PM | $7 advance, $10 day of show

Recorded with members of Bon Iver, Megafaun, and Josh Ritter's band, Anthony D'Amato's New West Records debut, The Shipwreck From The Shore, has already earned praise from NPR and The NY Times to SPIN and Billboard for its brand of heavy-hearted folk shot through with electric streaks of rock and roll.

Veering away from the homemade DIY production style that marked his early work, D'Amato relocated to producer Sam Kassirer's Great North Sound Society, an 18th-century farmhouse-turned-studio in rural Maine, to cut the album raw and fast in just eleven days.

Chef's Recipe
Ginger Salmon with Grilled Corn and Watercress Salad

From the kitchen of ABC Executive Chef Kyle Mason, we present this tasty and innovative dish you'll enjoy trying at home!

Ginger Salmon with Grilled Corn and Watercress Salad
Serves: 4

Ingredients:
  1. 1/2 cup plus 2 tablespoons balsamic vinegar
  2. 1/4 cup plus 2 tablespoons canola oil
  3. 5 small ears of corn, shucked
  4. Four 6-ounce skin-on salmon fillets
  5. 20 small slices of pickled ginger (about 1 ounce)
  6. Salt and freshly ground pepper
  7. 2 teaspoons Dijon mustard
  8. 1/2 teaspoon honey
  9. 1 bunch of watercress, thick stems discarded (about 8 ounces)
Directions:
1. Preheat the oven to 375°. In a small saucepan, boil 1/2 cup of the balsamic vinegar until reduced to 3 tablespoons, about 5 minutes. Let the reduction cool, then stir in 1 tablespoon of the canola oil.
  1. Heat a grill pan. Grill the corn over high heat, turning, until nicely charred all over, about 5 minutes. Let cool. Using a serrated knife, cut the kernels from the cobs.
  2. Arrange the salmon filets skin side down on a work surface. Using the tip of a sharp knife, make five 1/2-inch-deep slits crosswise in the flesh of each fillet. Stuff 1 slice of ginger into each slit, then thread each fillet lengthwise with a short skewer.
  3. In a large, ovenproof, nonstick skillet, heat 1 tablespoon of the canola oil. Season the salmon fillets with salt and pepper and add the fillets to the skillet, skin side down. Cook over moderately high heat until the skin is lightly golden, about 3 minutes. Transfer the skillet to the oven and roast the salmon for about 6 minutes, turning once halfway through, until the skin is very crisp and the fish is just cooked through.
  4. In a large bowl, whisk the remaining 2 tablespoons of balsamic vinegar with the mustard and the honey. Gradually whisk the remaining 1/4 cup of canola oil into the dressing. Add the grilled corn kernels and watercress to the bowl and toss to coat. Transfer the salad to plates and top with the skewered salmon. Drizzle the fish and salad with the balsamic vinegar reduction and serve right away.
