Recipe
Marcie and I both love to cook and bake, and have always talked about sharing a favorite recipe with you all in our newsletters. And now we are finally doing it! I made these lemon squares for my oldest son on the occasion of his 13th birthday just last week. We are lucky enough to have a Meyer Lemon tree in our yard, but regular lemons work just as nicely.
Lemon Bars
adapted from Ina Garten
Ingredients
For the Crust:
1/4 pound unsalted butter, at room temp
1/4 Cup sugar
1 Cup flour
1/16 teaspoon salt
zest 1 lemon
For the Filling:
3 large eggs, at room temp
1.25 Cups granulated sugar *Use 1.5 cups of
sugar if not using Meyer lemons*
1.5 Tablespoon grated lemon zest
1/2 Cup freshly squeezed lemon juice
1/2 Cup flour
Directions
Preheat oven to 350 degrees
For the crust, rub lemon zest into sugar with hands, until evenly distributed and fragrant. Cream butter and sugar until light in bowl of electric mixer. Combine flour and salt, and with mixer on low, add butter until just mixed. Dump dough onto well floured board and gather into a ball. Flatten dough and press into buttered 8x8 baking dish, building up 1/2 inch edge all around. Chill
Bake crust for 15-20 minutes, until browned. Let cool slightly, leaving oven on.
For filling, rub lemon zest into sugar with hands, until evenly distributed and fragrant. Whisk together eggs, sugar, lemon juice, and flour. Pour over cooled crust and back 30-35 minites, until filling is just set. Let cool.
Cut into squares, dust with confectioners sugar if desired, and enjoy!
