Greetings!
It's all about food this month with the Savannah Food and Wine festival going on. We are also featuring one of Savannah's hard to find gem restaurants, Vic's On the River.

Savory Waffles with Poached Eggs & Bacon
Ingredients: - 4 eggs, separated
- 2 cups milk
- 2/3 cup unsalted butter, melted
- 1 cup grated Parmigiano-Reggiano cheese
- 1/3 cup minced fresh flat-leaf parsley
- 2 1/2 Tbs. minced fresh chives
- 1/2 tsp. minced fresh rosemary
- 2 1/3 cups all-purpose flour
- 2 tsp. baking powder
- 1 1/4 tsp. salt
- Poached eggs and bacon for serving
Directions:
Preheat a waffle maker on medium-high heat according to the manufacturer's instructions. Preheat an oven to 200°F.
In a large bowl, whisk together the egg yolks, milk, butter, cheese, parsley, chives and rosemary. Over a sheet of waxed paper, sift together the flour, baking powder and salt. Add the flour mixture to the yolk mixture and whisk until smooth.
In another bowl, whisk the egg whites until stiff peaks form. Using a rubber spatula, fold one-third of the whites into the batter, then carefully fold in the remaining whites.
Pour 1/2 cup of the batter into each well of the waffle maker. Close the lid and cook according to the manufacturer's instructions until the waffles are golden brown and crisp, about 6 minutes. Transfer the waffles to a wire rack set on a baking sheet and keep warm in the oven while you cook the remaining waffles.
Serve the waffles warm with poached eggs and bacon. Serves 4 to 6.

November 11-17 A week long celebration of food and wine, the festival will feature celebrity chefs, guest winemakers, including Rob Mondavi Jr., cooking demonstrations and competitions for cooks, bartenders and wait staff.

Vic's On The River
This is one of the hottest and most appealing restaurants in Savannah, with award-winning food, a high-ceilinged and airy space that emulates a hip restaurant in New York or London with a gloss of historic authenticity that's Savannah all the way. It occupies the top floor of an antebellum cotton warehouse that was used by Sherman's troops during the Yankee occupation of Savannah. Past the sprawling cocktail bar into the dining room -- adjacent to windows with high-altitude views over the Savannah River you'll find the restaurant's pride and joy: a map painted by Union troops directly onto plaster, showing their idea of the juxtaposition of Georgia with Tennessee and South Carolina.
Vic's has a menu bursting with southern pride. Entrees might include a pulled-pork egg roll with barbecue sauce, hot mustard, and peach chutney, and popcorn grouper, served in a movie-palace cardboard popcorn box, with rémoulade sauce. The best main courses include braised shank of lamb with cherries, boneless filet of pork with butternut risotto, spicy wild Georgia shrimp over grits smothered in gravy made from andouille sausage and tasso ham. A great view and great food make this restaurant a Savannah gem.
