The weeks are ticking away and the season is flying by. This month I raced twice in the northeast in the Mont Tremblant 5150 and IM 70.3 Syracuse.
Fortunately, I was able to come away with the win in both events. After a slow start to the year, I was extremely happy to put together two solid races this month. After some blood work and really paying attention to nutrition in training, I finally was able to complete a 70.3 feeling strong at the finish line. After 5 months of training at altitude I think I am finally coming around and I am looking forward to the next few months of racing. My next event will be one mile away from my home at the Boulder Peak 5150. It looks like it is going to be a very competitive event as well as gender equalizer (males start after females and whoever crosses the line first wins a bonus). My mom is also coming out on July 4th to visit me and see my new home for the first time...I better get to cleaning!! I hope everyone is staying cool in the heat and humidity and getting ready for a fun 4th of July!

Curried Spelt
Ingredients:
- 2 cup of spelt OR faro
- Salt/pepper
- Coconut oil
- 2.5 teaspoons of curry powder
- 2 teaspoons of yellow mustard seed
- ¾ teaspoon at cardamom
- ¾ teaspoon of ground coriander
- 8 carrots cut into small pieces
- ¼ cup apple cider vinegar
- ½ lemon finely chopped with peel
- 1 rotisserie chicken
- 2 cups of arugula or baby kale
- 2 cups of cilantro
Place spelt and 2 tsp salt in a pot. Add water to cover by 1 1/2 inches. Bring to a boil; reduce heat to medium-low and simmer, uncovered, until spelt is tender and water is mostly absorbed. This takes about 45-50 minutes usually. When it is done (pretty chewy) drain and put in a large bowl.
Heat coconut oil in a pan and add curry, mustard seeds, cardamom, and coriander for about 3min. Stir in carrots and stir , let them cook on MED for about 5min.
Add vinegar and stir until it is evaporated (2min) and then add the lemon. Add this mixture to the spelt and then let cool.
Add shredded rotisserie chicken, arugula, and cilantro to mixture. Add olive oil if you like.
This is a great meal to take on trips. It keeps well in a Tupperware container and tastes good warm or cold! What is spelt?
Spelt is an ancient grain that is related to wheat but is a different species. It contains some gluten, but that gluten has a different molecular makeup than what is found in wheat. Spelt is about 17% protein and higher in fiber than wheat, and the extra fiber aids in the digestion of the gluten. It's sweet, nutty, and chewy,

Mont Tremblant now offers three races on the Ironman circuit- a 5150 (Olympic), a 70.3 (Half) and a full Ironman. If you have not competed in one of these events, I highly recommend doing so.
