Merry Christmas and a Blessed New Year!!
It's been a very hard year for many people in 2012. This Christmas season I pray for the Lord's peace and mercy for all of you. If you are lonely or heartbroken, just as Mary cradled Jesus our Savior in her loving arms, I pray the Lord will send you an earthly embrace to show His unending love for you. To all of the missionaries, peacemakers, military, first responders, physicians and those who's mission in life it is to heal and tend to, protect and serve, may God double your portion of blessings; may you be wrapped in His love and protection, endowed with spiritual and financial blessings and may your families find comfort in your desire to change the world for the better. Thank you for your service and I thank all of you for being a precious part of my world.
May the Lord bless you and keep you,
Peaceful Wishes and Merry Christmas,
Happy

Dressing up your Christmas table
One of the fantastic things about Southern home cooking is it gives us the opportunity to gather our families together and love on them with food.
I wanted to share a few favorites I've made for get togethers this holiday season because they are easy and delicious.
Don't forget to dress up those holiday dishes and cake plates to make your guests and family feel even more special. Most of our emagazines are put together with things we have had for years. Holiday greenery, red berries, ribbons and nostalgic Christmas ornaments dress a table beautifully and bring back memories as your family reminisces over tasty holiday delights. Our holiday table is dressed with cake plates that we've had for years. We've trimmed buffalo plaid ribbon to dress our cake plates and tie our theme together. The greenery, berries and birdhouses are also things we've kept through the years. I hope you enjoy our decorating ideas and our recipes.

Christmas Quiche & Special Treats
Surprise your family Christmas morning with these delicious Christmas quiches. Sautee'd shrimp and Vidalia onion, romanced with the sweet and nutty flavor of Gruyere, roasted red pepper and bacon, this egg and cream casserole will have your family thinking you've spent hours in the kitchen. Another of my favorite recipes for the season are the mini Pecan Tassees that are sure to delight! Although there are many recipes in similarity on the web, I borrowed this version from the Brown Eyed Baker, who in turn found it in and old Firehall Ladies Auxillary cookbook. If you are careful not to overcook them, they're near perfect everytime. Click here for the recipe |

Cracker Barrel's Hashbrown Casserole
In our Exploring with Happy Christmas newsletter we explored Cracker Barrel and their wonderful gift shop and great food. The good folks at Cracker Barrel are closed on Christmas Day to allow their family of associates to celebrate Christmas with their loved ones. However, they've been kind enough to share their famous hashbrown casserole recipe with me so you can make it for your family this Christmas morning. Click here for recipe |
