               The highlight of the Jones years was four visits to the property by President Dwight D. Eisenhower. An important supporter of the Republican Party, Jones had met and become friendly with the president in the early 1950s, and he even purportedly purchased property in Texas adjacent to a farm owned by Eisenhower and secretly paid for upkeep on the president's farm. The two men often went on hunting and fishing excursions to Jones' properties and elsewhere.

               On September 13 and 19, 1958, and again on July 9 and 16, 1960, the president visited Jones at Hianloland Farm, where they fished on the lakes, went duck hunting, shot skeet and toured the game farm. After one particularly good day of fishing, Eisenhower even cooked the fish for dinner.

               "It was a hectic time," said George Wheatley. "We didn't know he was coming, and one day I was near the cow farm and these two guys get out [of their car]...They told me they were Secret Service, just checking the place out because Eisenhower might want to visit. Then Jones called me and told me that they were coming out for the weekend and expecting guests. He didn't tell me who or anything else. They flew in by helicopter."

               In preparation for the president's visits, Wheatley and his staff pulled weeds from the lake - now called Eisenhower Lake -- to improve the fishing and stocked it with bass, rainbow trout and brown trout. Wheatley even operated the small boat from which the men fished, and he noted that the president was a good shot when it came to duck hunting. "When I was around, they just talked about what they were doing: fishing, hunting. They didn't talk any business. I imagine they probably did at some time, but not when I was around."

Roasted Short Ribs with glazed garlic, fennel, and carrotsThis entree received high compliments from our guests who attended The Labor Law Conference held on April 20, 2012 at Whispering Pines.
  

Roasted Short Ribs with Glazed Garlic, Fennel, and Carrots

Adapted from Barbara Kafka's "Roasting"  serves 4-6

5-1/2 pounds beef short ribs
1/4 cup beef stock or red wine
1-1/2 teaspoons caraway seeds
1 large yellow onion chopped in 1/4" dice (2 cups)
40 whole cloves garlic, peeled (about 1 cup)
2 large fennel bulbs (14 oz. each), trimmed, stalks removed, and cut lengthwise into 8 or 9 wedges
8 carrots peeled and trimmed, cut into 2 inch lengths
2 teaspoons kosher salt
Freshly ground black pepper, to taste

Directions:
Place oven rack in center and heat oven to 500 degrees.

 

Arrange ribs in a 14x12x2 inch roasting pan. Roast for 20 minutes, turn once and roast for an additional 25 minutes. Reduce oven temperature to 350 degrees. Using a slotted spoon, transfer ribs to a large platter. Pour or spoon off excess fat from roasting pan. Put pan on top of stove. Add stock (or wine) and bring contents to a boil while scraping the bottom of the pan to loosen all meat bits. Add caraway seeds to liquid and reserve.

 

Arrange half the onion, garlic, fennel, and carrots in a 5 or 6 quart casserole (preferably with lid). Arrange the ribs in a single layer on top. Layer remaining onion, garlic, fennel, and carrots over and around ribs. Sprinkle with salt and pepper to taste. Pour reserved liquid over all. Cover tightly with foil and a lid. Cook 3 hours. When done bring pot and all to the table. Serve alongside mashed or boiled potatoes.
