Recipe of the Month:  

Almond Joy Pancakes 

(Gluten-Free) 


 

 

Prep time: 10 minutes

Cook time: 10 minutes

Total time: 20 minutes

Makes 12 , 4 inch diameter pancakes

 

Ingredients: 

  • ½ cup coconut flour (I use Bob's Red Mill)
  • cup unsweetened shredded coconut
  • ¼ cup sweetener of choice (I use Stevita Stevia/Erythritol Blend)
  • ½ tsp baking powder
  • ½ tsp salt
  • 6 large eggs
  • ¼ cup organic, expeller pressed coconut oil, melted
  • ½ to 1 cup unsweetened almond milk
  • 1 tsp almond extract
  • ¼ cup toasted, slivered almonds
  • 2 ounces 63-80% cacao chocolate, finely chopped, or morsels
  • Additional coconut oil for the pan

  • For your safety, we require an appointment with your provider at intervals no longer than 6 months.
  • We pride ourselves on keeping wait times to a minimum and we do not overbook appointments.  For these reasons,if you cancel within 48 hrs of your appointment, or if you do not show up for your scheduled appointment, you will be charged for the full price of that appointment.
  • If you haven't been in for a routine follow up visit in over a year, there is an additional fee for an appointment due to the additional time needed to update your chart and review your history since your last visit.

As our children struggle with an increasingly large number of health issues such as skin rashes, poor concentration, inability to sleep, constipation, hyperactivity, tummy aches, and obesity, just to name a few, it is difficult to ignore the fact that most restaurant food, packaged food and fast food are filled with damaged oils and proteins, sugar, and harmful additives.  We want to encourage families to get together at the dinner table to eat a simple, real food meal more often to ensure good nourishment and also because it creates security, stress reduction, relationship strength and emotional confidence for our children and families as a whole.

Sandy Booker


We believe every one of our staff members at TWIHW deserves being celebrated and this month we want to raise three cheers for Sandy Booker.  A Wellness Consultant with us for over 9 years, it is not surprising that Sandy has an unquenchable passion for wellness and loves telling others about it.  Her loyalty extends not only to her employer and coworkers but also well beyond.  People who know Sandy will speak of her integrity, good character, and joyful spirit. If you need a word of encouragement or a good laugh, you are likely to find it in her company. Always with a smile and an optimistic outlook for each day, she inspires all of us to make the most of each moment. This woman chooses life and joy!  Sandy sets a wonderful example for all of us in wellness by her avid approach to exercise. She can often be found frequenting a Zumba class, a boot camp, or a ski slope.  Having a background in art and interior design, she can take a blank canvas or a ball of clay and create something beautiful, and also makes one-of-a-kind pieces of jewelry.  To top it all off, the gal makes, without a doubt, the best chocolate cake in the whole wide world.  We appreciate you Sandy!
