Good Medicine
I just celebrated my birthday and I decided my present to myself would be a camping trip for four days all by myself. My husband set up the camper for me and I settled in. My goals were to nap, fish, walk, swim and start a book I had been wanting to read. I set my alarm to get up and watch the sunrise, watched the herons fly around the lake and go fishing. I caught two crappie, and a huge white bass that broke my line (it's true!)
I got out and walked the campground noticing how much everyone cherished the outdoors and the camping experience. I started my book and made some tasty chicken on the grill. I built a fire each night and just marveled at the vast universe shining with millions of stars. I enjoyed the sunshine and watching the moms and toddlers playing at the lake's edge, exploring and burying their toes in the sand. While this might not be what you would choose for your birthday, it had to be one of the best ever for me.
I have had to learn to slow down and enjoy the peace away from the busyness and responsibilities in all aspects of my life. I have learned to take care of me and can attest that this time for me was a spiritual retreat.
There have been many times in my life that I was so overwhelmed taking care of everything and everyone in my life, that I didn't have much left for me!Today I can recognize when I am entering the tipping point and stop to refresh, energize and "fill my spiritual cup."
I am a better wife, mom, friend and nurse since I returned home. I was nurtured by a power much greater than myself and I call that good medicine!
My wish for you today is to take a break when you need one and do something that will nurture your heart and soul.

Recipe of the Month
Autumn Squash Soup

Servings: 6
- 2 tablespoons extra-virgin olive oil
- 1 finely diced carrot
- 1 finely diced celery stalk
- 1 diced onion
- 4 cups of cubed garden fresh butternut squash
- 1 teaspoon chopped fresh thyme
- 4 cups low-sodium chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Heat oil in large soup pot. Add carrot, celery and onion. Cook until vegetables begin to soften, approximately 3 - 4 minutes. Add butternut squash, thyme, chicken broth, salt and pepper. Bring to a boil, then reduce heat and simmer approximately 30 minutes or until squash is tender. You may use an immersion blender to puree soup or once soup is cooled, puree small batches in an upright blender. You can divide into portions and freeze for individual servings. Enjoy!

140 calories; trace fat (50 calories from fat)
6 grams of fat
6 grams of protein
20 grams of carbohydrates (5 grams of dietary fiber, 4 grams of sugar)
0 milligrams of cholesterol
280 milligrams of sodium
