Tailgating for Your Health
and the Huskers 
 

Fall is in the air and that means attending or watching games with friends and families. As I think about the focus on yummy tailgate snacks and creative drinks, I know that I need a plan to stay in my game.

 

My focus is a strong defense, meaning I need to resist attack by mentally tackling food choices that bring regret the next week when my jeans are a little too tight! I have learned as the coach of my game, I can fix new and creative recipes that are just as yummy and much better for me and my fellow fans.

 

We all have chosen to go for the extra point when choosing weight loss surgery and that prompts me to ask you, "Who's on your team"? I have had many "offsides" penalties in my journey and that is just part of the game, but the fact that I strive for a field goal each and every day is what determines the victory! Enjoy the season and GO BIG RED!

Creative Cooking
Recipe of the Month
 
Tailgater Meatballs
from the recipe box of Shelly Holman 
 
1 lb. 95% lean ground beef
1/2 cup dry bread crumbs
1/3 cup finely chopped onions
1 tbsp. chopped parsley
1/4 cup skim milk
1 egg
1/2 tsp. Worcestershire Sauce
Sprinkle ground black pepper
1/2 cup prepared chili sauce
1/2 cup tomato sauce with no salt added
1 tsp. chili powder
1 cup sugar-free grape jelly
 
Instructions:
Mix ground beef, bread crumbs, egg, onion, parsley and milk. Add Worcestershire Sauce and black pepper. Form into 36 - 40 small meatballs. Spray large skillet with cooking spray, place over medium heat until browned. Combine tomato sauce, jelly, chili sauce and chili powder. Pour over meatballs. Place in crock pot and simmer on medium for about three hours. Serve when meatballs are no longer pink.
Makes about 3 dozen meatballs

Patient Advisory Board

Did you know that we have a Patient Advisory Board? Several members of our support groups graciously volunteer their time and meet several times a year to fulfill our purpose statement created by the Advisory Board in 2009:
 
To empower bariatric patients with support and education to progress towards success in health improvement after weight- loss surgery.

Current projects:
  • Patient Reunion Planning
  • Support Group topics and guest speakers
  • Christmas Party scheduled Tuesday, December 4
  • Implementing activities such as an exercise group, book exchange and small group education classes similar to "Spring Into Action" facilitated by Marilyn Wadum RD, LMNT
