On January 20, 2015 we will be announcing the top 3 recipes based on YOUR feedback to us.  The top 3 vote recipients will receive a certificate for 10% off up to $2000 on their next signed remodeling contract with Remodeling Innovations Group.  To vote on your 3 favorite recipes please send email to [email protected] with "VOTE" in the subject line, only one vote submission per email address.
WEEK 3 RECIPES

 

Blueberry Raspberry Coffee Cake

  • FOR THE CAKE:
  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • � teaspoons Salt
  • � cups Butter, Softened
  • 1-� cup Sugar
  • 2 whole Eggs
  • 1 cup Sour Cream
  • 1 cup Blueberries
  • 1 cup Raspberries
  • _____
  • FOR THE TOPPING:
  • 1 cup Sugar
  • ⅔ cups Flour
  • 1 teaspoon Cinnamon
  • � cups Butter

Preheat the oven to 375 degrees. Grease a 9�13 pan.

Combine the flour, baking powder and salt in a medium bowl. Cream the butter in a large bowl until light, add the sugar and beat until light and fluffy. Mix the eggs in one at a time. Mix in the dry ingredients into the creamed mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Combine the berries in a small bowl. Spread half of the batter into the prepared pan, spoon the berries over the batter and top with the remaining batter.

For the topping, combine the sugar, flour, and cinnamon in a medium bowl. Add the butter and cut it into the dry mixture until the mixture is crumbly. Sprinkle the topping over the cake.

Bake for an hour or until a tester comes out clean.

 

 

Spinach Strawberry Salad

  • 10 oz. fresh spinach                         Remove steams and rinse
  • 1 qt. strawberries                                 Hulled, rinsed, and sliced thinly

OPTIONAL:

Or a combination of 2 kiwi (sliced), � cup of strawberries (same as above), and a small can of mandarin oranges.

Mix together

 

Dressing-

  • 1 � cup sugar
  • 1 tsp. grounded dry mustard
  • 2 tsp. salt
  • � cup white vinegar
  • � cup oil
  • 2 tsp. poppy seeds

Mix together, Boil 1 minute, then Cool

Pour over salad just before serving

*Dressing keeps well in fridge for 1 week*

*Optional* top with sliced almonds or pecan halves
