December Recipe Contest week 1 contestants.  This week we are featuring a Chocolate Almond Silk Pie and Swedish Meatballs.


Over the month of December we will be featuring a total of 10 recipes and looking for your 3 favorites.  Stay tuned for next weeks contestants.

WEEK 1 RECIPES

Chocolate Almond Silk Pie (Very Rich)


 

 

Crust

1 cup chocolate Oreo cookie crumbs or vanilla        wafer crumbs

3 tbsp. powdered sugar

¼ finely chopped almonds

6 tbsp. butter

½ tsp. vanilla

    Mix together like a pie crust

    Press into a 9 in. pie pan

    Bake at 400 degrees for 8-10 minutes; then let     cool as you make the filling.

 

Filling (3 step process, very important)

1 cup sugar

¼ cup butter

½ tsp. almond extract

(3)- 1 oz. squares unsweetened chocolate;                  melted

3 eggs

    1. Cream until fluffy for 3 minutes 

    2. Add the almond extract and melted                       chocolate; beat 2 minutes.

    3.  Add eggs one at a time; beat two                          minutes after each is added.

    Pour filling into cool shell(will thicken in fridge)

    Chill in fridge for 6-8 hours

    Garnish with whipped cream, slivered                   almonds, maraschino cherries, or chocolate         shavings

 

*Serves 6-8*

SWEDISH MEATBALLS:

 

1 lb Ground Beef

½ lb ground pork

½ cup minced onion

½ cup Italian bread crumbs

1 tbsp minced parsley

1 ½ tsp salt

1/8 tsp pepper

1 tsp Worcestershire sauce

1 egg

1/3 cup milk

 

**Mix, shape into balls. Brown in ¼ cup oil. 

**Make gravy.  Return balls to gravy and cook 15-20 min.

 

GRAVY:

½ cup flour

2 tsp paprika

3 tsp salt

¼ tsp pepper

4 cups boiling water

2 cups sour cream

 

**Stir dry ingredients in a bowl and add to skillet with left over oil. (add more oil slowly as needed to soak up dry ingredients).   

**Stir in 4 cups of boiling water and the 2 cups of sour cream.

 

Enjoy!! Serve with cooked Kluski Egg Noodles
