     10th Anniversary Cookbook

Recipes Wanted!


It's hard to believe that next year will mark 10 years since the CSA began at Rushton Farm.  What a wonderful journey it has been.  A cookbook is in the works to help celebrate the occasion.  We have many recipes in our coffers but would like to have CSA members share a favorite recipe or two. Recipes that use the fruit or vegetables found in our shares are preferred. Please email recipes to Allyson McTear at
[email protected] or place hard copies in the folder in the farmshed by September 2nd.  Many thanks and stay tuned for cookbook updates.

IN THE BAG Tidbits from the staff

Community
 
The heat is on and summer is in high gear. At Rushton Farm the fields are flowing with veggies, fruits and flowers just waiting to be harvested. This time of the season is nice because there is a pause in planting and while the weekly bounty is plentiful (huge haul this week) it is rather easy picking. Because of that the staff is starting to take some down time after a hectic start to the season. Friends and family have been coming through and the White Farm House where the staff resides has been getting a lot of use (seven people last night- that's communal living!).
 
This time of year also gives us an opportunity to spend time with our Rushton community. We have a couple of events coming up where all can gather at the farm to celebrate the season. Tonight is Beers at the Barn featuring music by the Hetzel Brothers from 6-7:30 pm. This casual event is free and has become very popular. It is open to everyone regardless of pick up day. The next one will be Friday, August 5th.
 
Saturday, July 30th from 5-7 pm we will celebrate the Rushton tomatoes with the ninth annual Tomato Tasting. This is a fun event and a great way to celebrate summer. Tickets are still available and can be purchased by clicking on the Tomato Tasting image in the column on the left.
 
As always Rushton Farm and Preserve is open to the public so if you cannot make it to an event feel free to just take a walk through the fields and woods and enjoy the beauty of summer on a farm.

THE DIRT Notes from the field



This year we are offering our members the opportunity to purchase lamb from Honeybee's Haven located right next door on Plumsock Road. The lambs are the Tunis breed and have been pasture raised. Information on purchasing lamb is located on the sign in table in the Farmshed.
 


RECIPES  


Zucchini Pizza Boats 


Servings: 2

Ingredients

  • 4 medium zucchini
  • � cup marinara or pizza sauce
  • � cup nutritional yeast (optional)
  • � red onion, sliced
  • � cup kalmata olives, chopped
  • � cup cherry tomatoes, sliced
  • 2 tablespoons fresh basil
Directions  
  1. Preheat oven to 400 F.
  2. Cut the zucchini in half lengthwise and scoop out the inside seeds.
  3. To help them lay flat on the pan, you can also cut a piece off the bottom of the "boat" to create a flat surface.
  4. Mix tomato sauce and nutritional yeast (if using).
  5. Spread a light layer of sauce (about 1 tablespoon) inside each zucchini
  6. Top with onions, olives, and tomatoes.
  7. Bake for 20-25 minutes, until zucchini is tender (but not mushy).
  8. Top with basil and serve.
