     10th Anniversary Cookbook

Recipes Wanted!


It's hard to believe that next year will mark 10 years since the CSA began at Rushton Farm.  What a wonderful journey it has been.  A cookbook is in the works to help celebrate the occasion.  We have many recipes in our coffers but would like to have CSA members share a favorite recipe or two. Recipes that use the fruit or vegetables found in our shares are preferred. Please email recipes to Allyson McTear at
amctear@verizon.net or place hard copies in the folder in the farmshed by September 2nd.  Many thanks and stay tuned for cookbook updates.

Pick Your Own!



I often tell the story of how the flower cutting garden at Rushton Farm was developed. At the start of our first season in 2008 the first Rushton Farm field managers, Aaron de Long and Ashley Brister, wanted to have a part of the farm that CSA members could engage in. We had built the Farmshed Garden for herbs and planted raspberries but both Aaron and Ashley felt a flower cutting garden would serve as a perfect complement.



At the time we were working seven days a week and I being the curmudgeon that I am insisted we did not have time to build a garden. At 3 pm on a Sunday afternoon after work Aaron and Ashley spent five hours tilling, turning and planting what is now the perennial garden located next to the greenhouses. Needless to say I was rather surprised to find the garden in place when I came in to work the next morning and I may have murmured something about the two of them wasting the limited time they had off in such an endeavor.



Of course the garden turned out to be a great success and one of the most popular features in our first season. With the success of that garden we built the large cutting garden in front of the Farmshed the next year that continues to be one of the most popular parts of the farm to this day. I have also learned the joy of arranging a bouquet of freshly cut flowers.
 
The cutting gardens will not be open until next week but the Farmshed Garden is in full bloom with flowers and herbs. The raspberries are also ready to pick and the blackberries are on their way. And of course there is the perennial garden looking better than ever nine years after it was planted. Please take the time to enjoy the full complement of the farm by tasting a few raspberries, harvesting some herbs or picking some flowers. Pick your own items are listed on the chalkboard on the sign in table or you can always ask our meet and greet volunteer what is available.

THE DIRT Notes from the field





In addition to the flowers, herbs and berries we also try to feature occasional field crops as pick your own items. The last couple of week's peas have been the featured field crop. This week we are opening swiss chard as a pick your own item. It is located in the front field behind the perennial garden. Orange cones will be placed by the chard so our members can find it. As previously mentioned you can look at the chalkboard for pick your own items.


RECIPES  




Grilled Zucchini With Capers, Basil and Lemon Recipe 



Servings: 4

Ingredients

  • 1 tablespoon juice and 1 teaspoon zest from one lemon
  • 3 tablespoons extra virgin olive oil, plus more for brushing zucchini
  • 1/4 cup chopped fresh basil leaves
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons capers, rinsed, dried, and roughly chopped
  • 4 medium zucchini, sliced into 1/2" thick disks or quartered, lengthwise
Directions
  1. Combine lemon juice, olive oil, basil, and capers. Whisk to combine, season to taste with salt and pepper, then set aside.
  2. Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over the coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Alternatively, preheat a gas grill to high, covered, for at least 10 minutes. Clean and oil the grilling grate.
  3. Using a pastry brush, brush zucchini with olive oil on both sides, and season to taste with salt and pepper. When grill is hot, add zucchini slices and cook, covered, until zucchini is well-browned on one side, 4 to 5 minutes. Flip slices and cook, covered, until zucchini is well-browned and tender, 3 to 4 minutes. Transfer zucchini to a serving platter, spoon vinaigrette over the top, and serve.
