Busy Bees

 

It's time to harvest the honey and we are finding the friendly bees at Rushton Farm have been very busy. Noah is reporting a record honey haul of over 420 lbs this season! He is spending endless nights bottling the precious nectar and it will be for sale at the Farmshed by the end of this week. The honey is being bottled in 8 oz. jars but larger jars are available on request (contact me at cfd@wctrust.org).   We sell out by November nearly every year so stock up now.

 

 

Another Rushton specialty that will be available this week is the Rushton Farm tomato sauce. We gleaned the first planting of tomatoes last week (see The Dirt below) to gather enough fruit to take to the Baumann's family to have sauce made.   Located in Sassamannsville PA the Baumann's family has been canning fruits and vegetables for over 120 years. Each jar of sauce has four lbs of tomatoes, onions, garlic, basil and oregano. It is extra thick so we like to add a little water or wine when we heat it up. Look for it for sale at pick up starting Tuesday.

THE DIRT notes from the field
 

So far this season the Rushton Farm Staff has been pleased with the crop production. Each winter we spend countless hours developing our crop plan- a calendar that will tell us what we are seeding in the greenhouse and planting in the field each day of the season. Some crops like garlic, potatoes, onions and sweet potatoes will have only one planting which we will harvest and offer through the course of the year. Other crops such as tomatoes, peppers, lettuce and greens will have multiple plantings to allow us to harvest regularly through much of the season.  

 

This past week we finished picking our first planting of tomatoes. We are currently harvesting the second and third plantings which should last well into September. By using several successions of plantings we are able to offer an abundance of quantity and diversity in your share each week.

RECIPES what to do with all those veggies  
 

 

(Fried eggplant with honey is another yummy alternative!

 

Eggplant with Honey & Mint

 

Yield: 4-6 servings  

Prep time: 15 minutes

Cook time: 8 minutes 

 

Ingredients:  

  • 6    tablespoons extra-virgin olive oil
  • 3    small eggplants, cut in 1-inch slices
  • 3    tablespoons honey
  • 3    tablespoons red wine vinegar
  • 10  leaves mint, torn
  • Salt and freshly ground black pepper
Directions:

1. In a 12 to 14-inch saute pan, heat olive oil over medium heat until just smoking.   

 

2. Add the eggplant slices and cook for 3 minutes until golden brown. Turn each piece over and cook another 3 minutes until golden brown.  

 

3. Add honey and red wine vinegar and toss enough to coat all pieces of eggplant.  

 

4. Add mint and season with salt and pepper. Serve immediately.
