IN THE BAG tidbits from Fred
The cool spring that has kept the soil from warming is beginning to give way to more seasonable temperatures. Because of this we will see a significant increase in the size of the shares this week. We will also see our first food donations to the West Chester Food Cupboard through the Rushton Farm Share the Bounty program. The Share the Bounty program was established to ensure that at least 10% of food grown at Rushton Farm goes to those in need in our community. Shares that are not picked up and excess vegetables from the field are donated once a week to either the West Chester Food Bank or the Chester County Food Bank. Since Rushton Farm's first growing season in 2008 over 10,000 lbs of produce has been donated to local food banks. This week we have the honor of taking the Share the Bounty Program on the road by partnering with the Dave Matthews Band to promote food donations. Rushton Farm was selected to represent local farms from Pennsylvania and South Jersey who donate produce to local food banks. At Dave Matthew's concerts in Camden this weekend we will be collecting food donations and encouraging concert goers to donate locally as well. More information can be found at www.reverb.org We encourage our members to support the West Chester Food Bank and the Chester County Food Bank and remember that your share never goes to waste if you cannot pick it up.

THE DIRT notes from the field
There are many stages in a farm season and mid June is one of the highlights. I would encourage Rushton Farm CSA members to take a moment and walk the farm during your pick up this week. Those of you who visited the farm during our "Meet the Farmers" event in early May will be able to appreciate the transformation of the farm over the past month and a half. Members can see crops that are at peak production and newer plantings just beginning to grow. Part of understanding the value and importance of local food is seeing where and how the food is grown and the fields of Rushton Farm are an ideal place to learn. The Rushton Farm Staff is eager to share their knowledge and answer any questions you may have so please take the opportunity to look around and share in the beauty of our community farm. -Rushton Farm Staff

RECIPES what to do with all those veggies
Sunflower Shoots Transform your health & favorite dishes
Lemony, crunchy nutty sunflower shoots are one of the best foods for enhancing your health and wellness. As a complete protein, the shoots boast a full profile of all 8 essential amino acids. Yes, protein can be green! Low in calories and high in nutrition, these small but mighty microgreens are packed with phyto-nutrients, vitamins and minerals. They keep your blood healthy, reduce inflammation, calm the nervous system, revitalize tissues, and balance PH levels in the body.
Sunflower sprouts can be added to either your raw or cooked cuisine. Besides crisping salads, sprouts are a lovely addition to green juices, soups, sandwiches and even bread dough.

Sunflower Sprouts Spring Salad
Serves 2
Ingredients
▪ 2 tsp whole grain mustard
▪ 3 tbsp lemon juice
▪ 2 tbsp extra virgin olive oil
▪ ½ tsp red chili powder
▪ ¼ tsp salt
▪ 1 medium shallot
▪ 2 carrots
▪ 2 cucumbers
▪ 2 radishes
▪ 1 avocado
▪ 1 ½ cup of sunflower sprouts or combination of sprouts & mix greens
Directions
- Whisk together the whole grain mustard, lemon juice, extra virgin olive oil, salt and chili pepper (optional, but highly recommended) in a bowl. Taste and adjust seasonings as needed.
- Remove the outer ring of the shallot. Using a sharp knife, cut the shallot into thin slivers. Place shallots into a colander and rinse under cold water.
- Mix the shallots into the dressing and set aside
- Cut carrots, cucumbers and radishes in thin slices
- Chop the avocado into small bite-sized pieces.
- Place the cut up vegetables onto a plate. Toss in the rinsed sunflower sprouts and additional greens if needed
- Dress salad to your desire
