Letter from the Chair
Dear CSIFT Members, Students and Friends,

The cold air is returning, green leaves are changing, and our favorite fall foods are coming into season. Whether it is an Oktoberfest beer or a Pumpkin Spice Latte that you've been waiting for all year, fall is finally upon us once again.

While the final three months on the calendar mark the end of 2015, they also represent the beginning of another season for the CSIFT, with our first dinner meeting of the year held last week.

Dr. John Coupland joined us at our first dinner meeting of the year to talk about the origins of the Food Industry in Chicago. He talked about the Chicago food industry while it was in its infancy, its spring, when there was little to no food laws or regulations in place. Today, we have moved a long way from the plant conditions which were condemned for being inhumane to animals and workers alike. Now we have certifications and safety standards.  Read more 
Oct. 19 - Celebrate Chicago with The Second City
The Chicago Section IFT has been celebrating the local food industry and supporting Chicagoland food scientists for 75 years. This October, as part of our Celebrate Chicago! Program Theme, the Chicago Section IFT is hosting a dynamic, interactive and hilarious meeting with another cornerstone of Chicago culture:
The Second City. The world renowned "Harvard of Comedy" Troupe, through Second City Works, will perform a wildly entertaining Improv Night at Maggiano's in Skokie.

Join us for a Chicago Section IFT dinner meeting like no other.  Be prepared to get involved, share ideas, and actively participate in the show!  One of these chairs on stage is reserved for you!

October 22 - Technical Breakfast Session
Regulatory Reflexes:  Balancing FSMA, Marketing and R&D
The Professional Development Committee is sponsoring the first technical breakfast session of the 2015-16 year with a review of recent FSMA regulations.

Dr. Robert Brackett, IIT Vice President and Director of the Institute for Food Safety and Health (IFSH) will provide an update on two key FSMA regulations:  Preventive Controls on Human and Animal Foods.

Karen Lewis, Director of Technical Services at Imbibe, will discuss How to Bridge the Gap Between Marketing and Regulations.

October 29 - New Professional Brewery Tour
Revolution Brewery, Kedzie Taproom
Fall is upon us and what better way to enjoy it than by taking a brewery tour!  On Thursday, October 29th, the New Professionals will gather at Revolution Brewery for a private tour and beer tasting.  

Tour will last 40 minutes, starts promptly at 7:30, and each attendee will receive two 7-ounce beer samples and a Revolution pint glass. The tour will include the history of the Chicago Brewery, the brewing process, packaging methods, and the bourbon barrel-aging technique.


Prior to and after the tour we will be hanging out in Revolution's tap room enjoying light appetizers and mingling amongst ourselves. This event is free but does require REGISTRATION. We look forward to seeing you there!

New Professionals at the Crosstown Pub & Grill

The New Professionals held their kickoff event on September 16th at Crosstown Pub & Grill in Naperville. This was the second event held in Naperville and we were excited to see a great turnout with both new and familiar faces. We had our own private space which made it easy to network and get to know one another. Delicious appetizers were provided, as well!

The New Professionals group encourages anyone who has been in the industry 10 years or less to join in on our networking fun. Watch the website for upcoming events! 
Nov. 5 - Membership Social Event: Kombucha Class
Margaret Nicholson with SportFuel will present a discussion about the importance of gut health and the mind-gut connection followed by a demonstration on making kombucha.  This will be followed by a  hands-on fermenting vegetable experience. 

In addition, a folder with instructions and additional readings will also be provided.  Take home kits will be available for purchase at the end of the event for $25. Heavy Appetizers will be served.

Join us on November 11 for a full day of learning and touring the largest regional IFT exhibit hall.  Last year's event drew over 3600 attendees.  The exhibit hall is already almost sold out with 540 exhibitors.

Being Proud of Food Science - A Chicago Story

The Chicago Section IFT 2015-2016 Kickoff Meeting was a great success . This meeting also marked the first of our "Celebrate Chicago!" themed program to mark our 75th year as the Chicago Section IFT. Dr. John Coupland, President-Elect for IFT was our guest and gave an informative, entertaining, and inspiring presentation "Being Proud of Food Science: A Chicago Story".
 
"...Chicago is the most American City..." One of Dr. Coupland's opening lines, an observation and declaration that grabbed everyone's attention and had heads nodding early on. A UK native and Penn State professor - Dr. Coupland knows how to make friends quickly in the Windy City.

As the audience was taken on a historical journey of the food industry of America, we learned why Chicago has been the lifeline of our nation's food supply since the Industrial Revolution. We gained insight from a food science perspective on how truly amazing this time was - advances in food science and technology allowed for easy access to commodities previously unavailable or unaffordable: meat, dairy, processed cereal products where now a part of the American lifestyle.

White bread - for centuries reserved only for the most stately - could now be included as a part of a full and affordable meal at Chicago-founded establishments like McDonalds. It was an exciting time.

Professional Development Committee Update
After a successful, fun-filled 2014/2015 year and a relaxing summer break, the Professional Development Team is back again, in full force. We are excited to bring you some great new events for this upcoming 2015/2016 season. Below is a snapshot of the successes of the past year and the exciting events we have planned for you this upcoming season.
 
2014/2015 Accomplishments
  1. The team organized four successful professional development events (one per quarter) for members, non-members and our food industry friends ranging from technical sessions to soft-skill workshops
  2. All events were fun, educational and filled to capacity, with long waiting lists
  3. The team has grown from 2 to 12 with more members signing up
  4. The team has developed standard operating procedures to create structure and consistency allowing us to continue these great events for you
