This past Monday the Chicago Section IFT had a joint meeting with the American Association of Candy Technologists (AACT). The AACT had their annual supplier's night event which consisted of table top chocolate and confectionary demonstrations followed by the CSIFT dinner meeting. Our speaker was Ron Sukenick, who gave an interactive talk on "The Power is in the Connection." The talk provided strategies for developing and utilizing deeper professional relationships.
The May dinner meeting will be the 53rd Annual Tanner Lecture, and is the last of our dinner meeting season. The origin of the Tanner Lectureship is part of the rich history of the Chicago Section IFT and was the outcome of an amazing accomplishment. The historical details provided in this column come from a variety of sources, of which I have tried to assure historical accuracy. If there are any discrepancies, please accept my apologies in advance and provide me with a correction.
During the early years of IFT, the Sections would manage all aspects of the Annual IFT Meeting when it was held within the geographical boundaries of their Section. The Chicago Section IFT hosted the Annual IFT Meeting in 1960 and the event was very profitable - the Section made $15,000, which at the time was a considerable amount of money.
After making this profit, discussion began on what to do with these funds. Leaders of the Chicago Section IFT wanted to use these funds to benefit the Section membership. Through these discussions, the concept and intent became clear - to use these funds to bring an outstanding lecturer that had a career of significant contributions in food science. Read more

Advances in Encapsulation Research
Despite many years of research, the food and flavor industries still struggle with improving the shelf-life of oxidizable food components (e.g. flavorings, polyunsaturated triglycerides, natural pigments, vitamins, etc.). Microencapsulation has been a common means of offering some protection to these ingredients.
This presentation will provide an overview of global research focused on optimizing spray drying of both flavorings and fish oils. The presentation will end with where I believe we have opportunity to further improve the performance of this process. Read more

Gary Reineccius, Ph.D., is a Professor and past Department Head in the Department of Food Science and Nutrition at the University of Minnesota. He has been actively involved in flavor research for more than 44 years. Read more

Executive Committee Increases Scholarship Funding

The Chicago Section IFT Executive Board passed two proposals this month expanding the scholarship impact of the organization. The first item will allocate an additional $50,000 of annual net income to scholarships. This will complement the current budget of $32,000 for scholarships. The second item will establish an endowment at the University of Illinois. The income from a $175,000 contribution from CSIFT will provide annual funding for a teaching assistant in food science product development. In addition to these commitments, the CSIFT Scholarship Committee is developing additional plans for future structure of scholarship support. Scholarships are funded primarily through two events: Annual CSIFT Suppliers' Night and the Annual Golf Outing. The funds raised through the support of our sponsors, exhibitors, and golfers is used to support the Scholarship Program. Your support has made it possible for this substantial increase in funding of the scholarship program. A special thanks to the Endowment task force members who supported the Scholarship Committee and the leadership of Nancy Moriarity. Task Force: Bill Becht, Dan Best, Jamie Colby, and Tim Stubbs. Election Results: 2015-16

I am pleased to announce the results of the 2015-2016 CSIFT Leadership Elections. All terms start on September 1st 2015.
- Joy Dell'Aringa has been elected as the incoming Chair-Elect.
- Jennifer Farrell has been elected as Secretary.
- Jamie Colby has been re-elected as Treasurer.

It was a very close race for the four available positions on the Executive Committee. The following individuals were elected: Susan Abraham-Rivera, Dan Best, Mike Carson, and Laura Gray.
Congratulations to all of the candidates as we are looking forward to your contributions to the Chicago Section. There are many opportunities to volunteer in our committees and the next election is coming up in less than a year.
I also extend a thank you to those members who cast their votes to help shape the future of our Section. We have great leaders in place which will help the Chicago Section continue to be a top Section within IFT! Download article

Committee Spotlight: Membership Committee

Over the last two years the Membership Committee has grown from a committee of two members to that of a dozen members with three subcommittees -
- Ambassador Program
- Membership Outreach
- Student Outreach
The goal for each of these subcommittees is to progress and achieve consistent growth organically, while also bolstering the growth of the Membership Committee through collaboration and coordination. Through this segmentation, the Membership Committee has seen significant growth and increase in Section memberships. Read more
Get Involved!
The Membership Committee is looking to recruit ambassadors from organizations within the Chicago Food Industry for their Ambassador Program. Ambassadors will have the opportunity to give back to the food industry on a higher level. Some of the key responsibilities of an ambassador are:
- To contribute some time as a point of contact between the organization and CSIFT, as well as spread awareness of CSIFT and it's benefits within the organization.
- Promote CSIFT events by distributing event notices via emails, flyers and reminder emails within his or her company,
- Notify employees about volunteer opportunities, and advocate for employee engagement.
- Communicate specific needs that target benefits to his or her company's employees.
The ambassador will be eligible for VIP Guest Program, and will be able to attend exclusive ambassador only events! Read more

The New Professionals held their March event on Wednesday, March 25th at Standard Market and Grill in Chicago. Twenty-five attendees enjoyed decorating cupcakes.

April Dinner Meeting Recap

The Power is in the Connection
Last week we had the pleasure to introduce Ron Sukenick as our dinner meeting speaker. Ron is a best-selling author and professional speaker who specializes in business networking and training.
For those of you who attended the meeting, he is also Bachelor #2! The primary topics that were covered included networking on LinkedIn and how to truly listen and engage with others.
One of the questions that was asked towards the end of the night was "How do you approach a new customer that you want to work with which you don't have any contacts with now?" The answer from Ron was simple. He replied "Don't go in blind" and one of the ways that you can accomplish this is by connecting via LinkedIn with people that work at the company. In this way you are able to start a conversation with someone at your target company, even if it isn't your target individual. Read more

The Chicago Section IFT provides up to $3,000 of Scholarship funds for unemployed individuals who are seeking employment in the food industry. The scholarship can be used to cover expenses from attending the Annual IFT Meeting and Expo, or it can be used to cover expenses from training workshops, short courses, etc. The maximum amount an individual can be awarded is $1,000. This scholarship offers an excellent networking opportunity for unemployed members to attend a Food Science-related course that may assist in obtaining employment. Annual Golf Outing - Cog Hill - August 18

Join Chicago Section IFT members and friends at our 8th annual golf outing at beautiful Cog Hill Golf & Country Club in Lemont, IL. This historic course is challenging for serious golfers and a natural setting for duffers! And as always, the outing supports CSIFT Scholarships...2014's outing raised almost $17,000 for scholarships!
We are very excited to have three courses reserved at Cog Hill Golf Course - Courses 1, 2, and 3. Shot-gun start & prizes will be awarded on all 3 courses so everyone has a chance to win! Once we have 360 golfers registered we will be able to open Dubs Dread again this year.
Cost per golfer $160.00.
Golfing will be followed by a social hour with hors d'oeuvres. The day will conclude with a dinner buffet and awards presentation
