The January dinner meeting featured Laura Kalaras, Research and Development Project Manager for the Cocoa R&D team at Barry Callebaut as she spoke on Chocolate & Cocoa 101. Laura gave an extensive overview of chocolate and cocoa and provided several chocolate confections and brownie for attendees to evaluate.

 

The venue was at Everest, located in downtown Chicago. As most already know, Everest is world renowned for their Personal French Cuisine and has received many impressive accolades for their food, wine and dining experience and a premium dinner experience. The dining experience was fantastic - everyone I spoke with enjoyed the premium dining experience. Again thank you to all the volunteers that gave their time and talents to help make this event a success.

 

The attendance at the dinner meeting was 125 - which was the maximum we could handle and we turned a few people away. The attendance numbers support what our members have told us - that there is a need to have a dinner meeting downtown. Some people recall the previous dinner meeting the Chicago Section had downtown was also sold out. There will be strong consideration to return to downtown next year. The Chicago Section IFT was founded on January 15, 1940. It seems fitting to have premium dining experience next January in downtown Chicago to celebrate the 75th anniversary of the Chicago Section IFT.

 

The upcoming events of the Chicago Section IFT include New Professionals activity to play WhirlyBall in Lombard on January 28 from 6-8pm - there is no registration fee! The February dinner meeting will be on February 9 at Maggiano's in Skokie where Goose Island's Brewmaster, Brett Porter will be speaking on "The Science of Brewing Beer". February 9 Dinner & Discussion - The Science of Brewing Beer

Join members and friends of Chicago Section IFT as we welcome Goose Island Masterbrewer Brett Porter to Maggiano's Old Orchard for our Monday, February 9, 2015 Dinner & Discussion event.

Goose Island Masterbrewer Brett Porter will share how beer is made.  The presentation will include the basics of fermentation and will then move into the creation of more complicated craft beers which are very popular right now.  The presentation includes a tasting and will include samples of various Goose Island beers available for everyone to try.


Brett Porter is responsible for creative and technical development of Goose Island's award-winning portfolio of beers.

 

Goose Island's Head Brewer since May 2010, Porter was promoted to Brewmaster in April of 2011. Goose Island's third Brewmaster, Porter is poised to continue the company's growth as it sets the stage for the future,

Vote for your Chicago Section IFT Leadership Team February 17-March 18, 2015 

We are pleased to announce the upcoming 2015 CSIFT Leadership Election to be held from February 17 until March 18, 2015.

 

The Nominating Committee would like to present to you the slate of candidates for the positions of Chair-Elect, Secretary, Treasurer and members of the Executive Committee. All candidates have accepted their nominations and provided biographical information on their current occupation, education, current and past CSIFT/IFT activities, and purpose for running for the open positions.

 

Joy Dell'Aringa, Chair Elect
Joy Dell'Aringa is the National Food Director for EMSL Analytical, Inc, leading the Food Division and directing all technical aspects of the food microbiology analytical offerings.

 

Joy is a member of the Executive Committee of the Chicago Section IFT, and is also the co-chair for the Membership Committee for the CSIFT. She is involved in cross-committee task forces to help elevate, unify, and grow the Chicago Section IFT using her background in business development, marketing, management and technical applications to contribute to the robust and diverse backgrounds of the CSIFT member roster.  Download full bio

Jennifer Farrell, Secretary 
 

Jenn has been a member of IFT since 2008, joining the student section as a freshman at Purdue University. Since graduating with a Food Science B.S. in 2012 she has joined the Chicago Section, attending meetings and volunteering at various events.

James Colby, Treasurer 

Jamie Colby has served as Treasurer of the Section for the past two years and will finish his 3rd year of appointment in 2015-2016. His previous IFT experience includes holding the position of Membership Secretary of the Minnesota Section in 2004-2006.

 

Jamie is a Group Leader at Kraft Foods Group in Glenview, IL managing a group of Packaging Engineers.  He has been employed with Kraft for 11 years and holds a B.Ch.E. Chemical Engineering from the University of Minnesota.  Read full bio

Susan Abraham-Rivera

Susan is the VP of Food Safety and Quality at AgriFIS, Inc. Susan and her Food Safety Team at AgriFIS conducts audits and assessments, develops food safety and quality assurance programs for GFSI - SQF, BRC certifications and prepares companies for FDA, USDA, CFIA inspections including FDA-FSMA compliance.   

    

The team also builds programs for Organic, Kosher and Halal certifications for food companies. Susan and her Technical Team at AgriFIS, conducts Food Safety Training for companies including HACCP, HARPC, GFSI-SQF, BRC, FDA and CFIA inspection readiness.  Read full bio.  

 

Dan Best 
 

Dan Best has been an IFT member since his student days in the 1970s and a member of the Chicago Section IFT since moving to Chicago in 1986. He served as Chair of the Rocky Mountain Section of the IFT as well as Chair of the Chicago Section IFT and (twice) as the National IFT's Marketing and Management Division.   

 

He has periodically served on the CSIFT Executive Committee and chaired various committees, including (at present) the Long-Range Planning Committee. Read full bio.

I am a Kraft Foods Retiree and would like to continue to actively participate and promote the CSIFT mission and goals. I am very active in Chicago Section IFT as a current Executive Committee Member serving on several committees and a past Chicago Section IFT Ellery H. Sanford Wolgel 
Sanford Wolgel, PhD, CFS, Managing Director, KCNM Consulting, provides innovation management, due diligence and expert witness services. Recently, Dr. Wolgel was a Business Development Consultant to the University of Chicago Center for Technology Development & Ventures, which spun out a start-up company to commercialize an innovative, sustainable food processing technology.
Previously, he was Director of R&D, Imperial Sugar Co., where he successfully launched an Open Innovation platform; and Director, Product and Market Development, Source Foods Technology, a General Mills' spin-off and the first US company to manufacture and market omega-3 fish oils. Read full bio.

Ellery H. Harvey Service Award Nominations Open

CSIFT Recognizes Service - Nominate Someone!
We are seeking recommendations for the Chicago Section IFT Ellery H. Harvey Service Award. Ellery H. Harvey was the first Chair of the Chicago Section IFT when it was founded back in January 1941. The Ellery H. Harvey Service Award recognizes an outstanding food technologist who has distinguished him or herself in the service of the Chicago Section IFT. Only Chicago Section members are eligible, excluding the Awards Committee Members and elected officers.

The award consists of $200 honorarium, plaque, and expenses of the awardee to the presentation at the May Tanner Meeting. If you know of someone who has made great contributions to the Section please use the link below to nominate and help recognize them for all their efforts. This is our time to say THANK YOU!

The deadline is March 31st. After the nominees are collected a panel of Past Chairs will select the awardee.

U of I JBT Scholarship Recipient Recognized
Mike Wanous & Naomi Mitts
Chicago Section IFT Awards $10,000 Scholarship

Naomi Mitts is the 2014 Recipient of the CSIFT-sponsored Jonathan Baldwin Turner Scholarship from the College of Agricultural, Consumer and Environmental Sciences (ACES), at the University of Illinois (U of I).

 

Naomi was formally awarded her scholarship during the annual Jonathan Baldwin Turner (JBT) Scholarship Program Recognition Banquet, held December 5 at the University of Illinois. The Banquet honors and recognizes JBT Scholarship recipients, their parents, and scholarship sponsors. Executive & Scholarship Committee member Mike Wanous presented the award at the event on behalf of CSIFT.

 

ACES was able to award a total of fifty (50) JBT Scholarships in 2014 to incoming freshman students pursuing a range of majors within the college. CSIFT has been a proud sponsor for several years.

New Professionals January Update

Join the New Professionals on Wednesday, January 28th for WhirlyBall.

 

 

Agility. Speed. Strength. None of these qualities will be of any use in the highly-competitive world of WhirlyBall. Although it combines lacrosse, hockey, and basketball with bumper cars, WhirlyBall has caused great athletes of every stripe to laugh and holler their way to a crushing defeat. If you choose to accept the challenge, you'll use hand-held scoops to propel whiffle balls at your scoring target. In a team of five, and with the help of a professional referee, you'll have a bang-up time trying to outscore the competition.

 

WhirlyBall is a New Professional favorite so remember to bring your business cards and co-workers!

January Dinner & Discussion in Review

Thank you to everyone who joined our most recent dinner meeting at Everest in downtown Chicago.   Barry Callebaut sponsored the evening with over 100 lbs of chocolates for everyone to sample and R&D Manager Laura Kalaras helped walk us through the different tasting notes and differences between the chocolate and cocoa products.    Download the Kalaras presentation 

 

Some of the most interesting points included cocoa origin and processing, Alkalized or Dutched Cocoa, and composition of different chocolates.

 

Of the fifteen chocolates tasted many of them had unique flavors. The cocoa bean origin in many cases changes the flavor of the finished chocolates.



An easily distinguishable difference in cocoa flavor would be between beans from Cameroon and beans from the Ivory Coast. In general beans found in Cameroon have a very smoky flavor associated with them while the beans from the Ivory Coast have much more pronounced chocolate and earthy flavors. Some other noticeable differences were found when sampling the chocolates from the Caribbean versus South America.

Professional Development Committee News

Our second Professional Development event for the calendar year was held on Dec 11, 2014 at the Lake Forest School of Management. It was another huge success. We honed in on a soft-skill "Innovation for Everyday Problem Solving".

 

The room was once again filled to capacity. Attendees were treated to a dynamic, high-energy, interactive 3 hour session, learning new ways to manage the innovation process. We learned creative ways to help our companies increase revenue, reduce costs and increase the bottom line. It was fabulous!

 

 

Our speaker, Corrine Miller, did a phenomenal job keeping us all on the edge of our seats in a very engaging, hands-on and interactive session. We all had a great time! We would also like to thank all our attendees for helping to make the event a huge success.

 

Technical Sessions

After a fantastic educational session in October, plans are underway for another great event in April. The team is currently busy planning the event. It will have a Beverage/R&D theme and will be held at Imbibe's brand new, state-of-the-art beverage innovation center in Niles, IL. Speakers will include representation from Diageo and Imbibe. Stay tuned for details. In the meantime, save the date on your calendars for this exciting event - April 30!
