Our December 8 dinner meeting featured Anthony Anscombe, Partner at Sedgewick, LLP as he spoke on
What's Cooking in Food and Beverage Litigation.

What I found most interesting in his talk was his perspective and learnings of representing food companies in class action, product liability, commercial and other legal matters. Thank you to all the volunteers that helped with this event!
On Wednesday, November 12 the Chicago Section IFT had their annual Suppliers' Night Event - and what a day it was! The Suppliers' Night Event started at noon where there were 545 booths, over 3,000 people that pre-registered and over 750 people that registered the day of the event which equates to 3,750 registered attendees. This represents the most people that have ever attended the CSIFT Suppliers' Night Event! Thank you to our dedicated volunteers and our sponsors.
The Section is well on its way for planning Suppliers' Night for 2015. We have already sold 390 booths, which represents 72% of our capacity (a total of 545 booths), which is ahead of the pace for 2014 or any previous year!
On Monday, January 12 the Chicago Section IFT will have our next dinner meeting where we will be doing something new and very different: this will be a premium dinner meeting event in downtown Chicago.

From a historical perspective, the Chicago Section has been trying to have a dinner meeting downtown, and this effort has been in response to the feedback we have received from our members.
The January dinner meeting will be held at Everest, which is world renowned for their Personal French Cuisine. Everest has received many impressive accolades for their food, wine and dining experience and a premium dinner experience like this will also require an increase of cost.
While we have had considerable internal discussions regarding the higher expense relative to a typical dinner meeting, we recognize the higher cost might be prohibitive for some individuals. Everest has given us a considerable discount on what they would typically charge, so what we will be receiving is thought to be of good value.
We will have live music. Our featured dinner meeting speaker will be Laura Kalaras, R&D Project Manager at Barry Callebaut with the presentation, "Chocolate & Cocoa 101" where there will be sampling of chocolates. In summary: fine French food...a talk on chocolate with many samples to taste...live music - personally I am very excited to attend this dinner meeting! We hope to see you at our January 12 Dinner Meeting at Everest in downtown Chicago.
2014 has been a wonderful year for the Chicago Section - and all of our volunteers have plans to continue this success into 2015. Have a safe and relaxing Holiday Season! Download article

Chocolate & Cocoa 101 Laura Kalaras is a Research and Development Project Manager for the Cocoa R&D team at Barry Callebaut. She has been with BC since 2011, has been part of both the chocolate and cocoa R&D departments, and is experienced in making and tasting cocoa and chocolate products from bean to bar. Prior to BC, Laura researched probiotic yogurt bacteria at Penn State University, where she received her B.S. in Food Science. Laura will present Chocolate & Cocoa101 complete with samples! The presentation will focus on how bean origin, processing, and application affect the flavor profiles of food made with cocoa and chocolate. The samples will be used to demonstrate the effects of these variables. December Dinner & Discussion in Review

Thank you to Anthony Anscrombie from the Sedgwick Law firm in downtown Chicago for coming out last Monday and speaking with us about litigation and class action law suits taking place in the Food Industry. Typically, as R&D, Sales, QA, or Management we don't think about how our day to day actions in the work place may leave our companies exposed or think about the number of people that are going to be scrutinizing the products we make. The primary goal for most of us is to make safe and enjoyable products for consumers. But, just remember, if there isn't any pollen in your Natural Honey or if the ppm Arsenic in your apple juice is higher than bottled water your company may be at risk.

Some of the most interesting class action law suits that are taking place in the Food Industry today are as follows: Subway is being sued for selling their famous $5 Foot Longs because they only measure in at 11". Activia Yogurt is involved in a class action law suit because the amount of probiotics found in a single serving of the yogurt may not be significant enough to aid digestion. Goldfish were accused of not being Natural because they have the potential to have a GMO ingredient included in them. Chobani Yogurt has been involved in litigation and accused of trying to hide the sugar in the label by using evaporated cane juice instead of other more common sugars on the label.

The most alarming of them all? Blue Sky Soda. Being sued because a consumer was outraged the product was not manufactured in New Mexico, which they assumed because of the Southwest Native American style artwork on the can. Yes, they are being sued because the product was made in California as opposed to New Mexico where the consumer thought it was made.
So the question becomes what can I do to protect myself? What can I do to protect my employer? Here are 5 tips from Anthony on how you can stay out of the "Stew".

Product Safety is #1.
- Avoid statements which are factually true but may be misleading to a large number of people.
- Everything in and about your product will be scrutinized. Be careful using descriptors such as "Natural", GMO Free", "Fresh", and "Organic".
- Keep an eye on what is being said about other similar products. The Plaintiff's BAR will target similar products if they find success with another.
- Watch what you say and how you say it. Make sure recorded documents and conversations tell a good story about you and your company.

On December 10th, we held a white elephant gift exchange at Headquarters Beercade in Chicago. We ate pizza and also enjoyed vintage pinball machines and arcade games while watching American Gladiators! Some of the white elephant gifts included a gigantic wine glass, ice shot glass maker, a romance novel, water gun, and Darth Vader toy.
The New Professionals Committee is looking for a few volunteers to join in on our fun. We are looking for outgoing and motivated individuals who can help plan and execute events. Please e-mail nhernandez@flavorchem.com if you are interested or have questions.

As an Officer or Executive Committee Member, you should be active, attend the monthly meetings and participate in a committee. Nominations Open for 2015 Tanner Lecturer
| | Who is Fred W. Tanner?
Nominees for the Tanner Lectureship are being sought. The Tanner Lecturer should be a world-class well-recognized researcher and excellent speaker. The nominee may be from industry, government or university, having developed unique technology in the area of food science or related disciplines which has significant impact to the food industry.
The Lecturer may be from any country, but preferably not from within our Chicago IFT Section. The award consists of an honorarium of $2,000, a plaque, and reimbursement of travel expenses. The Tanner Lecture will be presented in May 2015.
Nominations may be made by any Chicago Section IFT members, and preferably but not necessarily, consist of a curriculum vitae and an accompanying letter setting forth the reasons for the nomination.

The team is made of a group of passionate and energetic individuals who on top of their regular day jobs work very hard to put together dynamic programming just for you. We have a blast doing it!
