I hope that everyone at our first dinner meeting on September 8 enjoyed the talk by Steve Watts, Partner Prinova Group, on The World of Vitamins. We had 83 people register of which includes nine first-time attendees to our dinner meeting and thirteen non-members. Thank you to all that helped with this event!
One of the major themes of the Chicago Section IFT is to ensure our first time dinner meeting attendees and non-members have an enjoyable experience and become further connected with the food industry. We do this by identifying first time attendees at the dinner meetings, where Executive Committee Members will introduce themselves and assist with meeting others at the dinner meeting. A few days after the dinner meeting, our Membership Committee will call each first time attendee to answer questions and invite them to other CSIFT activities.
The value of CSIFT events should be both in the core function of the event and also the social interaction with our industrial colleagues. If the Chicago Section IFT is successful at both tasks, our belief is individuals will return to future events, become passionate about IFT, become involved in IFT and the future of the food industry.

Join members and friends of Chicago Section IFT as we welcome Devin Peterson, Ph.D., from the University of Minnesota as he speaks to us on " Understanding Alcohol Flavor: Opportunities to Modify Smoothness."
Abstract:
The smoothness of alcoholic beverages is a general descriptor often associated with product maturity and considered a desirable trait. From a sensory perspective smoothness is related to lower perceived trigeminal burn sensations, sourness, and astringency. Most studies on smoothness thus far have focused on changes in aroma markers as influenced by processing steps, such as fermentation, distillation, clarification, filtration (depending on the final product) as well as during maturation-storage.
This presentation will focus on the chemical drivers that influence the trigeminal burn (smoothness) of alcoholic products and how these attributes are influenced by the product chemistry and processing steps. Understanding the molecular basis for modulating trigeminal burn provides the basis to develop ingredient and/or processing technologies to improve palatability of a wide range of alcoholic products such as fermented and distilled spirits, pharmaceutical and personal hygiene products.

7th Annual Golf Outing a Great Success!

Over 360 golfers met at Cog Hill on Tuesday, August 19 and enjoyed a great day of golf (and only 20 minutes of rain). We filled two courses and had tee times for both Dubs Dread and Course 2 - Ravines.
This year's golf outing raised almost $17,000 for scholarships!
