Dear CSIFT Members & Friends,
I hope you all had a great time at the Tanner Lecture dinner meeting. As our last dinner meeting for this term I couldn't have been more pleased on the turn out. We had great food, an excellent presentation, and plenty of time to reminisce with one another on the great times we have had over the last year. Our Historian, Porter Myrick, did an excellent job in capturing those memories in a slideshow that was displaying during dinner.

Does Processing of Foods Impact Cancer Risk?
Chicago Section IFT awarded the 52st Fred W. Tanner Lecture Award to Dr. John Erdman, Emeritus Professor of Food Science and Human Nutrition, Professor of Internal Medicine and Professor of Nutrition at the University of Illinois at Urbana, Champaign.

Dr. Erdman is a world-renowned expert in nutritional and physiological biochemistry of both animals and humans. His research has been focused primarily on the importance of lycopene and its precursors on cancer risk and tumor behavior, and his work specifically addresses the influence of carotenoids and soy on health and well-being. He has authored over 180 original research articles and over 350 total publications. Download full article

CSIFT JBT Scholarship Recipients: Current & Past

The Chicago Section IFT provides several scholarships annually. One of these scholarships is the Jonathon Baldwin Turner Scholarship, currently funded for $8,000.00. The College of ACES adds $2,000.00 to our donation, providing a student $10,000.00 in scholarship support distributed over 4 years. The scholarship is awarded in the name of Chicago Section IFT by the University of Illinois Champaign-Urbana to an entering freshman.
Meet current recipient Janique Tyler.
In response to the question, "What has receiving this scholarship meant to you and how did it impact your research at school?" this is what she had to say.
"Winning this scholarship means so much to me. It greatly helps me pursue my passions in food science. I am so grateful for the generosity of others. I may not have been able to study at the U of I without the aid of the scholarship. Read complete interview.
Meet 1997 recipient Andrew Moltz. Andrew Moltz graduated from the University of Illinois Urbana-Champaign with a Bachelors of Science in Food Science and Human Nutrition. He earned his Masters of Science if Food Microbiology at University of Illinois as well and also earned an Associate Degree from the Cooking and Hospitality Institute of Chicago - Le Cordon Bleu. He currently is employed by Pepsico / Quaker Oats as a Corporate Executive Chef. "Winning the JBT scholarship immediately made me aware of the importance that professional societies hold for both networking and career development. By attending regional events as well as annual conventions, I was not only able to meet people with similar interests but also learn about the breadth of knowledge and disciplines the field of Food Science has to offer. Learning to appreciate the importance of staying connected with professional organizations through IFT has stuck with me to this day as I now find myself actively immersed in other career specific organizations " Download full article.

CSIFT Supports Local Collegiate Programs

During the May Executive Board meeting, a donation of $500.00 was approved to cover the University of Illinois' Food Science and Human Nutrition Graduate Student Association's Annual Symposium
This event provides a forum for FSHN graduate students to highlight their research and prepare for the upcoming IFT Annual meeting either by delivering an oral and/or poster presentation. The funds will be used as awards for student travel to IFT's Annual meeting, as well as to provide light refreshments during the event.
As a result of CSIFT's sponsorship, CSIFT members are invited to attend the event. It's a great opportunity to support and engage with students who are the future of our industry. The Symposium is scheduled June 18, 1-5PM and will be in Bevier Hall the Urbana-Champaign campus. If you are interested in attending or want more details, please contact Anthony Cam (cam2@illinois.edu), the Symposium Co-Chair.
In addition, a donation of $500.00 was approved to support the
Regional Collegiate Dairy Judging Competition.

The Regional Contest is a chance for students trained by college professors who are experts in dairy product evaluation to practice their skills and compete. A group of industry expert judges select the eight products to be judged in six categories, and they evaluate them using the same attributes and scoring values taught by the coaches.
The six dairy products that are evaluated include 2% fluid milk, butter, cheddar cheese, vanilla ice cream, cottage cheese, and strawberry-flavored Swiss-style yogurt. During the competition, the students utilize their method honed sensory skills and standardized scorecards to evaluate product quality and score the products. Teams and individuals that score closest to the expert evaluations are honored with awards. Read More

MIdwest AOAC Annual Meeting & Expo

Silliker is organizing the Midwest AOAC annual meeting this year and you are cordially invited to attend the meeting. The meeting opens with the key note address by Dr. Bob Brakett, IFSH on Food safety and tools to monitor it. The program has a strong emphasis on food safety in relation to microbiology and chemical contaminants, food authenticity, traceability and adulteration assessment, trans fatty acid analysis in relation to PHO assessment and updates on dietary fiber. Proposed Nutritional Labeling Changes - What they mean to food industry, techniques to assess Microbiological Food Safety, food safety management, Food safety Modernization Act, QC in the Lab are some of other topics part of the technical sessions. There are workshops on the last day one on "Measurement of Uncertainty" and the other on "Food Safety Systems".

| Ellery H. Harvey Service Award
Each year the Chicago Section IFT recognizes an outstanding volunteer who has distinguished him or herself in the service of the Chicago Section IFT by awarding them the Ellery H. Harvey Service Award. This award is named after the founding chair of the Chicago Section IFT from 1941 whose passion for the profession helped form the first and largest section of the Institute of Food Technologists.

This year we are happy to announce the winner of the Ellery H. Harvey Service Award is Uwe Nienaber. Uwe holds degrees from Institute of Food Chemistry, University of Münster First State Examination for Food Chemists; Chemical State Inspection Laboratory, Münster Second State Examination for Food Chemists; and Institute of Food Chemistry of Münster Ph.D. in Food Chemistry. Chair's Achievement Award
Every other year the Chicago Section IFT awards the Chicago Section IFT Chair's Achievement Award for outstanding achievement in Food Science. This award is eligible to Chicago Section IFT Members only.
We are pleased to announce this year's winner of the Chair's Achievement Award is Robert Boutin, President of Knechtel, Inc.
Robert attended Roosevelt University, earning a B.A. in Mathematics and a B.S. in Chemistry in 1970 and a MBA in 1976. In 1972 he started his career when he joined Breaker Confections/Sunmark as Research and Development Manager. Four years later, he accepted a position as New Products Manager at the Wm Wrigley Jr. Co.
In 1983 Robert moved to Wilton Enterprises as New Products Manager. In 1985 the food industry consulting firm Knechtel, Inc. hired him as President. This is a position that he still holds today. He is also an owner of Bentley Specialties, Inc, a custom co-packer. Read more.

The Chicago Section IFT Executive Committee is comprised of 12 members who each serve a 3 year term. This year the following members were elected to serve:

The role of the Executive Committee is to establish policies and develop the activities necessary to meet the goals of the Section and develop and approve an annual budget. They meet prior to the monthly dinner meetings from September to May and as needed.

The New Professionals group encourages anyone who has been in the industry 10 years or less to join in on our networking fun. Look for updates to the Facebook group and CSIFT website. If you are not receiving monthly emails with upcoming event information, please email Niki at nbaran@flavorchem.com and request to be added.
The New Professionals went to Comedy Sportz in Chicago on Thursday, April 24th. The improv comedy show was hilarious and the NPs got to shout out suggestions to the quick witted comedians.
May's event will be our last event of the 2013-2014 year. Join us in the Home Run Suite at the Schaumburg Boomers baseball game on Friday, May 23rd. There will also be fireworks after the game - talk about going out with a bang!We are limited to 25 tickets so register ASAP! Once you register, your name will be given to the ticket box office.
