On July 12, 2013 the IFT Board of Directors passed a motion to unify IFT membership.

Dear CSIFT Members & Friends of CSIFT,

 

We hope you enjoy this month's newsletter.  For the first time we have made it available to our entire mailing list and not limited it to members of CSIFT.

I hope you all had a great time at the February dinner meeting.  I want to thank all the committee volunteers and our business office for making the evening a very special event!  The House and Program Committees certainly lived up to their reputation providing a great venue and guest speaker.

I look forward to seeing everyone at our March 10th event at the Rosewood Restaurant in Rosemont, IL.  We will have a very special guest speaker in Dr. Joanne Slavin a Professor at the University of Minnesota.  Her presentation is titled "The Good Carbohydrate".

Join members and friends of Chicago Section IFT as we welcome Dr. Joanne L. Slavin, professor at the University of Minnesota in the Department of Food Science and Nutrition as she shares the latest research on "The Good Carbohydrate."

The search for the holy grail of diets continues.  Humans are omnivores and can adapt to a wide range of foodstuffs.  Traditional diets generally reflect the locally available food supply.  The trick to obtaining good tradition is to consume a diet with the appropriate number of calories and adequate protein and essential vitamins, minerals, and fluids for your environment.  

 

Traditionally, nutrient recommendations have been made to prevent diseases caused by nutrient deficiencies.  The amount of dietary carbohydrates required to confer optimal health in humans is unknown.  Dr. Slavin will share the latest research on "good carbohydrates."

The New Professionals group encourages anyone who has been in the industry 10 years or less to join in on our networking fun.  Look for updates to the Facebook group and CSIFT website.  If you are not receiving monthly emails with upcoming event information, please email Niki at nbaran@flavorchem.com and request to be added.

   On January 23rd we held our annual Whirlyball event in Lombard which was sponsored by Prinova.  We had a New Professional attendee high with 46 people!  All of us raced around in bumper cars attempting to score goals for some friendly competition.  We also enjoyed pizza and nachos while networking and seeing the neat stuff Prinova had to offer. 

Our February 20 event is Chocolate and Wine Tasting at Life's a Cabernet in Chicago.  The cost is $20 per person (member or non-member), but registration is limited to 25 people so sign up quickly! 

 

On Wednesday March 19th we will meet at Xtreme Trampolines in Carol Stream. Join us for some high flying trampoline action.

Focus on the University of Illinois:  Product Development Course - Creations 

Tom Niedorborski, Kraft Foods, (middle) interacts with University of Illinois students during their final presentation for the product development course.
University of Illinois students enrolled in the Product Development course presented the products they had been working on developing during the fall semester to the public, including several food industry professionals, on Monday, December 16.

 

FSHN 466, Product Development, is the senior capstone course for the Food Science and the Food Industry and Business concentrations at the University of Illinois. The course provides a team-based, applied approach to developing new food products. The student teams were assigned a few product attributes that their products needed to meet, creating different product categories amongst the items developed.

 

The Chicago Section IFT provides funding to partially support one of the teaching assistants for this course. David Bloom, a graduate student in Food Science and Human Nutrition, served as the Chicago Section IFT teaching assistant this semester. He assisted several of the teams in problem solving, ingredient acquisition, task management, and other aspects of the product development process.  Download Article


February Dinner Meeting Recap

Food Technologists Can Change the World -
For Better or for Worse

 

It was a pleasure to see everyone at the Chicago Section IFT February meeting.  It was a packed house of over 154 people.  There was a lot of energy and good discussions by those that attended.  We had nearly 20 people attend the dinner meeting that had not attended in the past.


Michael Jacobson, Ph.D., Co-Founder and Executive Director of the Center for Science in the Public Interest was our guest speaker for the dinner meeting held at Hilton in Northbrook, IL. Afterwards, several people commented that they were glad the Chicago Section IFT gave Dr. Jacobson the opportunity to speak on issues he believes are important for consumers.  Dr. Jacobson gave a very good presentation which was followed by and excellent question and answer session.

 

Dr.  Jacobson provided three areas of where some improvements in food quality have occurred - but more improvements are needed in the development of foods:

  • Reducing sodium content;
  • Reducing sugar content; and
  • Providing new and more appealing opportunities to encourage people to consume vegetables.

Tanner Lecture Award Winner Announced

 Does the Processing of Foods Impact Cancer Risk? 

 

This year's Tanner Lecture winner is John W. Erdman, Jr., Ph.D., Professor Emeritus,
Department of Food Science and Human Nutrition at the University of Illinois at Urbana, Champaign.

 

World-wide, cancer continues to be the primary cause of non-infectious disease mortality.  It is generally assumed that environmental factors, including diet choice, accounts for a third or more of cancer risk.  Because differential food processing operations are used to convert raw materials into final food products, one might ask whether choice of processing techniques or selection of types of processed foods increases or decreases the risk of cancer.

 

 

Much more is to be accomplished in this emerging field of research, but application of current knowledge should help with the war against cancer.  Download Full Article

CSIFT Recognizes Achievements & Service - Nominate Someone!

We are seeking recommendations for the Chicago Section IFT Chairman's Achievement Award and the Ellery H. Harvey Service Award. Just a little bit of Chicago Section IFT trivia, Ellery H. Harvey was the first Chair of the Chicago Section IFT when it was founded back in January 1941.

The Ellery H. Harvey Service Award recognizes an outstanding food technologist who has distinguished him or herself in the service of the Chicago Section IFT. Only Chicago Section members are eligible, excluding the Awards Committee Members and elected officers. The award consists of $200 honorarium, plaque, and expenses of the awardee to the presentation at the May Tanner Meeting.

If you know of someone who has made great contributions to the Section please use the link below to nominate and help recognize them for all their efforts. This is our time to say THANK YOU! The deadline is March 31st. After the nominees are collected a panel of Past Chairs will select the awardee.
