Message from Our Chair John Chambers

John Chambers_2
Chicago Section IFT 2013-2014 Chair DMH Ingredients
Dear CSIFT Members,

Happy holidays!

I hope you had a great time at the December dinner meeting.  The House and Program Committees certainly lived up to their reputation!  Kudos to them for organizing a very special event! Dr. Gary Reineccius, Professor, University of Minnesota gave a great presentation on New Approaches for Discovery in Flavor Research.  It was amazing to see from his presentation the advances in flavor research over the last 50 years.  I can't wait to see what the next 50 years of research brings us.

We will kick-off the New Year at our January 13th event with a very special guest speaker Doug Heitkemper, Ph.D., Inorganic Laboratory Brand Director, FDA.  He will be speaking on Analytical Challenges in Emergency Response to Chemical Contamination Events in Foods. Our event will be held at Maggianos in Skokie, IL.

I want to point out the dedication and passion our leadership team has in keeping Chicago Section #1 in the country.  It has been a fantastic year for the CSIFT.  I would like to take this opportunity to thank the leadership team and the volunteers for their hard work and dedication throughout the year!

Over the past few months, I had received inquiries from some of you regarding the leadership opportunities within the Section.  If you are interested in serving the Section and want to be part of the CSIFT Leadership Team next year, I encourage you to contact Linda Perucca lperucca@mdlz.com.  She is the Nominations Committee Chair. Linda will be delighted to share with you the open positions for the 2014-2015 session of the CSIFT.

I wish you all a safe and happy holiday season!!  Download article

Analytical Challenges in Emergency Response to Chemical Contamination Events in Foods

Doug Heitkemper is the Branch Director of the Inorganic Laboratory Forensic Chemistry Center at the U.S. Food and Drug Administration

Doug Heitkemper, Ph.D.

The FDA's Forensic Chemistry Center (FCC) provides laboratory support and problem solving capabilities in emergency response to events of chemical adulteration and contamination of foods.

Contamination may be intentional as in cases of product tampering, economic adulteration, and terrorism.  Unintentional contamination, such as in cases of environmental or process induced contamination, have also required emergency response.

Dr. Heitkemper earned a B.A. in chemistry from Wittenberg University in 1985 and a Ph.D. in analytical chemistry from the University of Cincinnati in 1989.  That same year, he joined the FDA as a research chemist in the newly established Forensic Chemistry Center (FCC).  He spent most of the next 16 years as an analyst, researcher, and team leader working primarily in the fields of elemental analysis, elemental speciation, and ion chromatograph.

Samantha and Janique were formally awarded their scholarships during the annual Jonathan Baldwin Turner (JBT) Scholarship Program Recognition Banquet, held December 6 at the University of Illinois.  The Banquet honors and recognizes JBT Scholarship recipients, their parents, and scholarship sponsors.  Nancy Moriarity and Mike Wanous presented the awards, on behalf of CSIFT, at the event.

December Dinner Meeting Recap

It was great to see so many people at the December dinner meeting of the Chicago Section IFT!  The Section had 135 people attend - a fantastic turnout considering the weather was a bit frightful!

We were fortunate to have Dr. Gary Reineccius as our speaker.  Currently, Dr. Reineccius is Head of the Food Science and Nutrition Department and also co-Director Flavor Research and Education Center; both from the U of MN.

Dr. Reineccius  proposed the next generation of flavor analysis: chemometrics (flavormetrics), which is a comprehensive, data-driven, multi-disciplinary approach.  The approach is that all instrumental data collected are valuable a priori (not restricted to earlier "thinking") to allow for an unbiased view of the food system.  Chemometrics are employed to utilize mathematical & statistical tools to make rationale analysis of the chemical measurements.

It became clear why chemometrics are needed: large data sets with multiple variables are obtained hence the need for data visualization and interpretation.  The discussion gave an example of mandarin fruits, followed by the potential challenges and shortcomings of this approach.  Download Article
