Dear CSIFT Members,
Our 51st Chicago Section IFT Suppliers' Night was a great event! We had over 525 exhibitors, over 3000 attendees, and we had 63 new exhibitors this year.
Our Suppliers' Night is a great place to network, see new product trends, and is a place to present your company to a huge audience.

New Approaches for Discovery in Flavor Research

Join members and friends as we gather to learn about new approaches in flavor research from Professor and Department head in the Department of Food Science and Nutrition at the University of Minnesota, Gary Reineccius, Ph.D.
His presentation will describe a relatively new approach to discovery in food flavor research using a technique based on metabolomics. The objective is to develop methods for the untargeted analysis of chemical stimuli related to flavor perception as opposed to the more common metabolomics application in health-related research.
In our field we wish to consider for study all (ideally) low molecular weight compounds as candidate chemical stimuli in flavor perception instead of focusing only on compounds already known to influence the flavor quality (unbiased).
This presentation will outline our application of this methodology to citrus juices (mandarin). Analytical approaches will be outlined and a brief summary of results obtained will be presented.<read more>

Join the New Professionals!
In September we held our kick-off event at Top Golf. Around 30 people came out for networking, food, and miniature golf. We lucked out with gorgeous weather and met a lot of new people.
On October 16th we took a tour of Goose Island Brewery in Chicago. We not only got a behind the scenes tour, but we sampled their amazing beer, some of which isn't even on the shelf yet! Read full article.

Tanner Lectureship Nominations Open

Nominees for the Tanner Lectureship are sought. The Tanner Lecturer should be a world-class well-recognized researcher and excellent speaker. The nominee may be from industry, government or university, having developed unique technology in the area of food science or related disciplines which has significant impact to the food industry.

The Lecturer may be from any country, but preferably not from within our Chicago IFT Section. The award consists of an honorarium of $2,000, a plaque and reimbursement of travel expenses. The Tanner lecture will be presented on Monday, May 12, 2014.
Nominations may be made by any Chicago Section member, and preferably but not necessarily, consist of a curriculum vitae and an accompanying letter setting forth the reasons for the nomination.
Nominations are due no later than December 30st, 2013, and should be sent to the Tanner Committee Chair: Zuoxing Zheng, 847-646-3388 or zuoxing.zheng@kraftfoods.com.
