About the Speaker:  The movie, The Informant was based on his life as a corporate executive and as an undercover agent for FBI price fixing case.  (You can rent the movie!) These books have been written about this case:  Rats in the Grain and Mark Whitacer Against all Odds.

Education:  B.S. and M.S. in Animal Science, Ohio State; Ph.D. in Nutritional Biochemistry, Cornell University; Law degrees, Juris Doctor and L.L.M., from Northwestern California University in Sacramento, CA; MBA , Ph.D. in Psychology, and  Ph.D. in Economics, Kensington University, Glendale, CA.

 

Mark Whitacre, Ph.D., has almost two decades of top management experience as CEO, COO & President.  Much of Mark's top management experience was obtained at Fortune 500 companies prior to leading entrepreneurial companies, especially in the area of biotechnology and fermentation. He was president of ADM's  BioProducts Division from its inception and it became one of the largest fermentation complexes in the world in less than six years. He is now COO of Cypress Systems (www.cypsystems.com)  and  has worked for companies including  Ralston Purina and Degussa.

Happy Holidays!
 
While flying home from my business trip last Friday, I was thinking of the dedication and passion of our leadership team in making the Chicago Section the most envied in IFT. 

 

It has been a fantastic year for the CSIFT. I would like to take this opportunity to thank the leadership team and the volunteers for their hard work and unabated support throughout the year. 

 

In the last couple of months, I had received queries from some of you regarding the leadership opportunities in the section. If you are interested in serving the Section and want to be part of the CSIFT Leadership Team next year, I encourage you to contact Uwe Nienaber, the chair of Nominations Committee (uwe.nienaber@kraftfoods.com) right away. Uwe will be delighted to share with you the open positions in Executive Committee for 2013-2014 session of the CSIFT. 

 

I hope you had a great time at the December dinner meeting. The House and Program Committees certainly lived up to their reputation! Kudos to them for organizing a very special gastronomic delight for the holiday party... 

 

We will kick-off the New Year with a very special guest speaker, Dr Mark Whitacre, COO and President of Operations at Cypress Systems, at our dinner meeting on Monday, January 14 in Rosewood Restaurant & Banquets. Dr. Whitacre (aka The Informant) was the whistle blower in the ADM price fixing case in mid-1990s. Appropriately, Dr. Whitacre's talk will focus on "Challenges of Business & Ethics in both the National and International Arena". I encourage you to register for the meeting at your earliest convenience.

December Holiday Meeting Recap  

Research and Development Chefs Thomas Talbert, and Lauren DeMaria from Culinary Sales Support, Inc

 

I was very pleased to see everyone at the CSIFT Holiday Meeting. It was a packed house of over 110 people. We celebrated the evening by giving back to the less fortunate in our communities. CSIFT partnered with Toys for Tots where we collected dozens of toys for children in Chicagoland.

 

We were blessed to have four marines join us for the festivities that 

 collected the toys for distribution. CSIFT also partnered the Greater Chicago Food Depository where we collected hundreds of food item that will be distributed to those in need in our communities. A special thanks to all those who helped to give back to those in need

during the holidays!

        

     

 

We were very fortunate to have Thomas Talbert and Lauren DeMaria from CSSI as our guest speakers for the dinner meeting held at Millrose Restaurant in South Barrington, IL. Thomas and Lauren helped us learn about the processes of beer and cheese making, along with flavor profiles of each as they mature. They showed us how pairing beer and cheese makes the perfect combination of flavors. Explaining why young and fresh cheese goes well with a light beer. And how sharp cheeses go best with highly hopped bitter beers. In addition they educated us on the history of cheese and beer.

Chicago Section IFT! Call for Nominations for  2013-2014
Would you like to have an impact on the future of the Chicago Section IFT? Do you want to apply or improve your leadership skills? The Section is vibrant and in good financial health. In order to keep 

it growing and provide new ideas and value to our membership we need volunteers who will contribute some of their time and enthusiasm in a number of elected positions.

If you are interested in serving the Chicago Section IFT in this capacity, we would like to hear from you. As an Officer or Executive Committee Member, you should be active, attend the monthly meetings and participate in a committee. You will be involved in lively discussions and decision-making for the Section. This is a great opportunity to share your experiences and knowledge with fellow members.

These are the positions that we encourage you to run for:

  • Chair-Elect (commitment of three years, serves as Program Chair during the first year, Section Chair during the second year, and Immediate Past Chair during the third year)
  • Treasurer
  • Secretary
  • Executive Committee members (4 positions open, commitment of three years)

CSIFT Volunteers Needed to Host the IFT13 Annual Meeting and Food Expo  July 13th-16th

   

Chicago Section IFT Volunteers needed to host 2013 IFT Chicago will be the location of the 2013 IFT Conference in July of next year. 

 

Although it seems far away, it will be here before you know it.  The local Section is involved in several activities to help plan the Conference. 

 

The Host Section Activities Committee will be chaired by Pat Sullivan and Linda Perucca, but we don't do it alone. There are several sub-committees involved as well. Many of the positions are filled, but we are still looking for a Co-Chair for "Family Activities." We are also seeking volunteers to staff all the sub-committee. If you are interested please contact the Co-Chairs of the committee. Volunteers receive (1) complimentary registration to IFT based on a contribution of at least (6) hours of assigned volunteer duties.

 

Hospitality - Brigid Heath at brigid.heath@yahoo.com or Carol Bender at cbender@lifewise1.com.  The primary responsibility of the Hospitality volunteers is to provide information and assistance to meeting attendees. Volunteers should be prepared to answer questions relating to area attractions, restaurants, cab fares, shuttle bus routes, directions to city activities, maps, sights, costs, certified and state approved baby sitters service, location of meeting rooms, etc.   It is suggested the volunteers know the location of all functions and attend the AMFE Host Section tour of the Convention Center which will be scheduled prior to the meeting.

The primary responsibility of the Family Activities volunteers is to staff the Family Lounge and to secure family videos, games, magazines, newspapers, information on local family entertainment and other items for use in the lounge

Tanner Award Call for Nominations

Nominees for the Tanner Lectureship are sought. The Tanner Lecturer should be a world-class well-recognized researcher and excellent speaker. The nominee may be from industry, government or university, having developed unique technology in the area of food science or related disciplines which has significant impact to the food industry.

 

The Lecturer may be from any country, but preferably not from within our Chicago IFT Section. The award consists of an honorarium of $2,000, a plaque and reimbursement of travel expenses. The Tanner lecture will be presented in May 2013.

 

Nominations may be made by any Chicago Section member, and preferably but not necessarily, consist of a curriculum vitae and an accompanying letter setting forth the reasons for the nomination.

 

Nominations are due no later than December 30st, 2012, and should be sent to the Tanner Committee Chair:

New Professionals Update!

 

We had our white elephant gift exchange at Beer Bistro in the West Loop last Thursday (12-13-12).  

Pizza and craft beers were on the menu and some great joke gifts were given including: Holiday night-lights, cake-pop makers, travel size loufas, and Amistad on DVD (full screen version).


The sponsor for our February Whirlyball event which is our biggest event of is sponsored by Prinova and we would like to thank them for their generosity. We have two more event this year that can still be sponsored (Wine Tasting and End of the year Golf event).

Jonathan Baldwin Turner Scholarship

Carly Rosenberg Awarded the 2012 University of Illinois Baldwin Turner Scholarship Sponsored by CSIFT.  Carly, a freshman in Food Science and Human Nutrition at the University of Illinois, is the 2012 Recipient of the Jonathan Baldwin Turner Scholarship sponsored by the Chicago Section IFT.  

 

Carly was officially recognized at the annual College of Agricultural, Consumer and Environmental Sciences (ACES) Jonathan Baldwin Turner Scholarship Banquet, held November 30; Mike Wanous, representing CSIFT at the Banquet, presented her with the award.

 

Concentrating in Dietetics, she aspires to be a certified diabetes educator and investigate treatments for diabetic children and adults.

 

Carly is gifted, capable, and well deserving of this honor. While attending high school (Adlai E. Stevenson High School, Buffalo Grove, IL), Carly was a teen staff leader with Operation Snowball, a youth empowerment program. She was a musical performer with the Stevenson Showcase, an anchor for her high school radio and news network, and played intramural flag football for three years.

AFT December Newsletter

 

We finished the last month of the Fall 2012 semester strongly with various events. Our department head Dr. Faye Dong is retiring after 10 years of service at U of I, and held her retirement celebration on Thursday, Nov. 29 th, 2012. Dr. Dong has interactedwith many students, graduate or undergraduate, in the department.

 

Each of us has some memories with her. The department collected

these feelings from students, and presented to Dr. Dong as a gift. It was a wonderful and memorable retirement party for both Dr. Dong and our students. The last AFT meeting was on Dec. 4th. Our previous club president came in and talked about the upcoming   college bowl, which will be held at U of I. At the time, many helpers will be needed, and we are calling for more people who are interested to participate. Students

can not only be more involved in our department, but also gain more leadership experiences.

Effective immediately the CSIFT Membership dues are now $25.00 per year.

 

"We haven't had an increase in the membership dues for the past decade. The new fee structure would allow us to continue to bring high caliber speakers to our dinner meetings, and to initiate new learning programs (e.g., Early Morning Technical Series) in the future."
