The Art of Wine and Cheese
Chicago Section IFT will be holding their holiday meeting at, with presentation focused on the Artistry of Making and Aging Cheese and Beer along with a cheese and beer pairing. Speakers giving this presentation and demo are Research and Development Chefs Thomas Talbert, and Lauren DeMaria from Culinary Sales Support, Inc. (CSSI)
About the Speakers:
Thomas Talbert, Senior Director, Culinary, R&D
Thomas heads up the culinary team at CSSI, leading a team of chefs and dietitians in both retail and foodservice development.
Laura DeMaria, R&D Chef 
From an early age, Lauren knew she wanted to work with food. As part of the National Restaurant Association's ProStart program, she was able to participate in culinary competitions throughout her high school career.

Mark Whitacre, Ph.D has almost two decades of top management experience as CEO, COO & President. Much of Mark's top management experience was obtained at Fortune 500 companies prior to leading entrepreneurial companies, especially in the area of biotechnology and fermentation. He was president of ADM's BioProducts Division from its inception and it became one of the largest fermentation complexes in the world in less than six years. He is now COO of Cypress Systems (www.cypsystems.com) and has worked for companies including Ralston Purina and Degussa.

Dear CSIFT Members,
This month we celebrated the 50th Anniversary of our Suppliers' Night event. It was a smashing success by any measure. We had over 550 suppliers exhibiting their products and services to a diverse group of participants from the industry, academia and government. The attendance exceeded the 3,000 mark!
We recognized and honored three of the oldest broker sales organizations at the event for their years of dedicated service and support for the CSIFT Suppliers' Night annual event. The companies honored at the event included - 1) Dawson Sales, 2) E. J. Sales, and 3) The Thurber Company.
In addition, the executive committee of CSIFT extended a very special recognition to honor Joe Stout for his passion, innumerable contributions and years of dedicated service leading the Suppliers' Night Committee.

2012 Suppliers' Night Recap

Chicago Section IFT presented our 50th "Suppliers' Night" event at the
Donald E.Steven Convention Center,
Rosemont, IL. From my personal observations
I am pleased to report the day was a resounding success.
While we await the hard numbers from the Business Office I am confident our booth sales will exceeded 550 and our attendance easily exceeded 3,000..
The Innovation NOW! Forum was well attended with the number of attendees growing throughout the morning and some really great information shared by the presenters. The members-only section of the website will have some of these presentations available for download before the end of the year.
We commemorated our 50th Suppliers' Night as follows:
Creation of a 50th logo with elements displayed prominently in all communications materials and on-site signage including the Buyer's Guide. .2012 Supplier's Night Buyer's Guide
Creation of a Buyer's Guide insert that specifically recapped as much of our last 50 years as possible and contrasted that time line to appropriate evetns of the period. It also talked to the history of the broker organizations we honored.
Three of Chicago's oldest broker sales organizations were honored for their years of dedicated service to and support of CSIFT Suppliers' Night. Those companies were:

The Thurber Company
In addition, we honored Joe Stout for his
many years of dedicated service heading the
Suppliers' Night Committee.
We had a large cake created with the 50TH Anniversary logo displayed prominently.

2013 Chicago Section IFT Annual Suppliers' Night

Call for Nominations for the 2013-2014 Season of the Chicago Section IFT!
Would you like to have an impact on the future of the Chicago Section IFT? Do you want to apply or improve your leadership skills? The Section is vibrant and in good financial health. In order to keep it growing and provide new ideas and value to our membership we need volunteers who contribute some of their time and enthusiasm in a number of elected positions.
If you are interested in serving the Chicago Section IFT in this capacity, we would like to hear from you. As an Officer or Executive Committee Member, you should be active, attend the monthly meetings and participate in a committee. You will be involved in lively discussions and decision-making for the Section. This is a great opportunity to share your experiences and knowledge with fellow members.
These are the positions that we encourage you to run for:
* Chair-Elect (commitment of three years, serves as Program Chair during the first year, Section Chair during the second year, and Immediate Past Chair during the third year)
* Treasurer
* Secretary
* Executive Committee members (4 positions open, commitment of three years)
The nominating committee will propose the slate for the 2013-2014 Officers and Executive Committee Members at the business meeting on 10 December 2012 for a vote.

Chicago will be the location of the 2013 IFT Conference in July of next year. Although it seems far away, it will be here before you know it. The local Section is involved in several activities to help plan the Conference.
The Host Section Activities Committee will be Chaired by Pat Sullivan and Linda Perucca, but we don't do it alone. There are several sub-committees involved as well. Many of the positions are filled, but we are still looking for a Co-Chair for "Family Activities" and "Technical Tours." We are also seeking companies that are willing to open their doors to a tour during the Conference.

Tanner Award - Call for Nominations
Nominees for the Tanner Lectureship are sought. The Tanner Lecturer should be a world-class well-recognized researcher and excellent speaker. The nominee may be from industry, government or university, having developed unique technology in the area of food science or related disciplines which has significant impact to the food industry.
The Lecturer may be from any country, but preferably not from within our Chicago IFT Section. The award consists of an honorarium of $2,000, a plaque and reimbursement of travel expenses. The Tanner lecture will be presented in May 2013.
Who is Fred Tanner?
Nominations may be made by any Chicago Section member, and preferably but not necessarily, consist of a curriculum vitae and an accompanying letter setting forth the reasons for the nomination.
Nominations are due no later than December 30th, 2012, and should be sent to the Tanner Committee Chair:

 TOYS for TOTS Chicago Section IFT
Making a Difference in this
Season of Caring and Giving
Making Chicago Section IFT a special and energizing membership community at this wonderful time of year. Please bring a new, unwrapped toy to our December 10th Holiday Gathering.
Ages include newborn to 16 years old. Heavy need for toys in the age range between newborn and 10 years of age. Toys for Tots prefers not to accept realistic looking weapons and gifts with food.

About Toys for Tots Since beginning the U.S. Marine Corp Reserves Toys for Tots Program in 1947, Marines have distributed more than 452 million toys to more than 209 million needy children. This charitable endeavor has made U.S. Marines the unchallenged leader in looking after less fortunate children at Christmas.
Over its life span, the Marine Toys for Tots Foundation has supplemented local toy collections with more than 98 million toys valued at more than $694 million; plus provided promotion and support materials valued at over $8.5 million.
MISSION: The mission of the U. S. Marine Corps Reserves Toys for Tots Program is to collect new, unwrapped toys during October, November and December each year, and distribute those toys as Christmas gifts to less fortunate children in the community in which the campaign is conducted.
GOAL: The primary goal of Toys for Tots is to deliver, through a new toy at Christmas, a message of hope to less fortunate youngsters that will assist them in becoming responsible, productive, patriotic citizens.

Food Insecurity- Donate to the
Greater Chicago Food Dipository
Food Insecurity is a major problem in our food rich country. Make a difference this holiday season and bring a donation of food to benefit the Greater Chicago Food Pantry to our Christmas IFT gathering. We work around food all day and come home to full refrigerators and pantries. It is easy to lose sight of the hunger around us.
Nearly 678,000 people each year rely on emergency and supplemental food provided by the Food Depository and its member network of 650 food pantries, soup kitchens and shelters. That figure represents a 36 percent increase over Hunger in America 2006 and reflects the recession and accompanying rising unemployment rates.
Each week, the Food Depository and its member agencies serve 142,400 men, women and children:
- About 37 percent of the people the Food Depository
serves are children under 18
- Nine percent of clients are children under 5
- Six percent of clients are homeless
- 34 percent of households include at least one employed adult
- 22 percent of households report their main source of income is
from a job
- 10 percent own the place where they live
- 44 percent receive SNAP/Food Stamp benefits
