Message from the Chair Dear CSIFT Members, It gives me a great pleasure to report that the 2012 Golf Outing raised $11,253 for the CSIFT Scholarship Fund. It's an outstanding accomplishment and we should be all very proud of our volunteers for their hard work, and the local businesses and suppliers for their generous support for the event. I would like to share some of the highlights from our last Executive Committee meeting held on Oct 15th at the Maggiano's Restaurant in Skokie: - Section membership: It's growing - we now have1,649 members (v. 1,592 last year at this time). If you are passionate and would like to help out in our membership drive, please contact Laura Colby, Chair, Membership Committee.
- Suppliers' Night 2012: This year we will be celebrating the 50th anniversary of Suppliers' Night. Jim Anderson and his team of volunteers have done a fantastic job of planning this historic event. We have already sold 540 booths and making room for additional booths to meet the demand! We are expecting over 3,000 attendees. If you would like to volunteer for this event, please contact Jim Anderson. He is desperately looking for volunteers to help out at the Suppliers' Night event on November 15th.
- Long Range Planning: Jerry Bard, Chair of the long range planning committee requested the executive committee to consider revisiting the vision and mission statements of the CSIFT to ensure alignment with the section membership. I have listed below the section mission for your information and comments:
To serve the Chicago Section IFT by providing educational opportunities for members and future members by:
- Increasing awareness of the vital role of food science in everyday life;
- Supporting causes to advance the profession; and
- Providing a forum for the exchange of ideas, knowledge and information
I would appreciate your thoughts and comments on the mission statement. - Professional Development: Last year, we had a very successful pilot program on Professional Development under the leadership of Atul Khare. He truly championed the program!
As you perhaps know, Atul has moved away from the local area, and relinquished the chairmanship of the committee. We are looking for a volunteer to take the leadership of the program and rejuvenate it. If you have a passion for it and would like to lead the Professional Development program, please contact Sanford Wolgel or me at your earliest convenience.

October 2012 Meeting Recap
Science-Driven Solutions with Tocotrienols (Natural e 3): Dr. Fong Chee Wai, Head of R&D at Davos Life Science Pte Ltd.
It was truly an honor to have Dr. Fong Chee Wai, Head of R&D at Davos Life Science Pte Ltd as our guest speaker for the dinner meeting held at Maggiano's in Skokie. Dr. Fong flew all the way from Singapore to be with us. He had an outstanding presentation on the benefits of Natural Vitamin E in broad applications like personal care, nutritional products, as well as food and beverage.
Dr. Fong shared the history and discovery of Vitamin E. He disproved several myths of Vitamin E and gave us a great background on the research of the product. Dr. Fong opened our eyes to the benefits to natural Vitamin E vs. synthetic. He detailed several case studies on the product and showed what Davos can offer as the only company that can purify isomers of tocotrienol from palm oil for use in clinical trials and supplements.
All in attendance were educated in the evidence that tocotrienol is an effective anti-inflammatory agent. Dr. Fong showed how natural Vitamin E is a great option for consumers with so many diseases having a root cause of inflammation.
I look forward to seeing everyone at Suppliers Night in November. Please join us as we will be celebrating 50 years of Suppliers Night in Chicago!

Chicago will be the location of the 2013 IFT Conference in July of next year. Although it seems far away, it will be here before you know it. The local Section is involved in several activities to help plan the Conference.
The Host Section Activities Committee will be Chaired by Pat Sullivan and Linda Perucca, but we don't do it alone. There are several sub-committees involved as well. Many of the positions are filled, but we are still looking for a Co-Chair for "Family Activities" and "Technical Tours." We are also seeking companies that are willing to open their doors to a tour during the Conference.
If you are interested in Chairing one of the committees or hosting a technical tour during the conference, contact Pat Sullivan at (630) 927-9904 sullivan277@comcast.net or Linda Perucca at 847-646-3821 lperucca@mdlz.com to learnmore.

News from the University of Illinoise at
Urbana-Champaign Department of
Food Science Human Nutrition

The Food Science and Human Nutrition Graduate Association (FSHNGSA) is having an exciting October, having already held one event and another set prior to the Halloween holiday. Starting off, Dr. Hong Chen presented recent updates on epigenetic research occurring within her lab group at our Pioneer Seminar Series. The roughly 50 attendees were able to enjoy lunch while learning more about the research efforts of the Chen Lab.
To help fund events such as the Pioneer Seminar Series, FSHNGSA holds various fundraisers throughout the year, and coming up later this month is our annual Halloween Bake Sale. Students, including FSHNGSA members, and faculty within the department donate a variety of homemade Halloween treats to help support our sale.
These proceeds will specifically help fundupcoming events, including another Pioneer Seminar Series, a résumé workshop, and an etiquette dinner.
Each of these events will provide graduate students with additional opportunities for professional development, whether it be through education provided by the Pioneer Seminar Series or preparation for upcoming career and internship searches through the résumé workshop and etiquette dinner

Association of Food Technologist (AFT)
During October, AFT had multiple companies hold information sessions, as well as our general meeting. Newly Weds Foods came on October 4th and PepsiCo came on October 10th. Both companies were recruiting students for possible fulltime or summer internship opportunities in various locations across the country.
We had a great turn out at both events and lots of Papa Del's pizza! Later this month on October 24th we are expecting Diageo to come back to campus for a special internship workshop, a first for the FSHN department, which aims to help students with resumes and interviewing.
There were a variety of social events this month to welcome in the fall weather. Visiting the Urbana Farmer's Market on September 29th in which everyone had a good time shopping for local produce and delicious baked goods. In addition, we also had a Chili on the Quad fundraiser October 11th - 13tth where we prepared vegetable and seasonal pumpkin chili for two dollars per bowl. Including this year a pumpkin painting event held on October 16th, which was a great success.
The AFT selected a second historian for our club Steven Yang, who is will be responsible for maintaining our websites and event photography. October is barely halfway through, but we are eagerly planning our next events and meetings for the fall semester.
