Happy 4th of July!  We have a super holiday lineup for all of your holiday picnics, and barbecues.

 

Here are a few suggestions to celebrate the red, white and blue:

 

Red- cherries, raspberries, Red Cat cheese, Burgers or Steaks, red currants, red potatoes, red cabbage, beet hummus, TOMATOES, red torpedo onion 

White- Chevre, a bagette, hakurei turnip, onion, scallions, fresh garlic   

Blue- blueberries, blueberry pie, Birchrun Blue cheese

With any luck, maybe there will be the first few peaches as well. But if not, or if you miss them because they sold out in 5 minutes - hey, there will be more very soon!!

It is going to be such a great weekend to be with family and friends! Something that I like to take to the party while keeping it simple is a Fig and Blue Cheese Tart. It might sound complex and the flavors definitely are but it is from the 5 Ingredients Fix Cookbook by Claire Robinson. The byline is easy, elegant and irresistible and this recipe is all of that!
For the grill try kabobs with veal cubes and veggies from from the market! A family favorite are the veal chops - reminder not to just toss the bones they make a healthful bone broth! Keep it simple with veal burgers - just like hamburger but better!
Have a sparkling Fourth of July!


Fig & Blue Cheese Tart
Recipe adapted from 5 Ingredient Fix by Claire Robinson

Ingredients
1 sheet thawed and refrigerated puff pastry
2 large sweet onions
6 large dried Calimyrna Figs
2 oz Birchrun Blue Cheese

Directions
Preheat Oven to 400 and line a baking sheet with parchment paper.
Roll puff pastry to approximately 10 x 16.
Place on parchment paper, score a 1 inch border around the edge [careful not to cut through] and pierce the center area with a fork so it does not rise.
Bake 15 minutes until the edges are puffed and golden brown.

Caramelize onions and figs with olive oil - salt and pepper to taste and add a couple of sprigs of thyme if you have it.

When ready to assemble heat oven to 350.
Spread caramelized onions and figs evenly over cooked pastry shell.
Top with crumbled blue cheese.
Heat 5 - 7 minutes until warmed through.

Serve warm or at room temperature.
