Grace Galanti  & Eckerton Hills Farm

Overlooking the Oley Valley, Eckerton Hill Farm encompasses 58 acres of vegetables, herbs, berries, pastures and hay fields.  This year, the farm is working with Grace Galanti of Aurum Holistic Skincare to grow a variety of medicinal and culinary herbs that can, among other things, spice up your soup, improve your skin tone, help you to breathe easier and even raise your spirits during the waning hours of the day
Special Guest: Playgrounds for Palestine is a 503c non profit featuring fair trade certified organic olive oil from 2013 harvest in Birqin, Palestine. 100% of the proceeds from the sale of this olive oil benefits the building of playgrounds in Palestine and neighboring countries that host Palestinian refugee camps. In partnership with Canaan Fair Trade we are featuring 500 ml bottles ($20) and 1 liter tins ($30) of Rumi olive oil and Nabali olive oil. Both are cold pressed and extra virgin. Rumi refers to olive oil harvested from the oldest trees dating back to Roman times and has a strong flavor. Nabali is harvested from younger trees and has a milder flavor. Tasting will be available.

At 9 am, Kelly Smith, none other than the farmer at Deep Roots Valley Farm, will give an on stage demo of


how to cut up a whole chicken.
 

Then we'll show you how to vacuum freeze the parts with the  Foodsaver system.  FInally, Kelly will cook up one of her family's favorite recipes!

Hello Market Shoppers!

Saturday, June 21st is the first official day of summer and what better way to celebrate than to come to the farmers' market!  Our farmers and food artisans will be here in force with just-picked and just-baked goodies.  Our food trucks will be cooking up mouth watering dishes many of which use market ingredients.   

 

It's the Third Saturday of the month when we pay particular attention to health.   

 

Speaking of health,  we would like to invite you to a special event in Phoenixville on the evening of July 1st.  We've been working with the Colonial Theatre and Activate Phoenixville to bring the movie Fed Up to town.   This important movie about the American diet will play from June 27th through July 3rd and we hope you will have a chance to see it.  On July 1st, we will have a panel discussion at the theatre immediately after the film.  Mark your calendars now and look for more info in next week's newsletter!

9AM An onstage cooking demo by local cooking school Cooking Spotlight.  Jenny will whip up pasta with scape pesto and some delicious mixed greens with raisins and pine nuts- yum!

Free blood pressure screenings and information from Phoenixville Hospital

Sugar-Free Strawberry Jam making at the market table from 10:30 to noon.  We'll show you how to make the jam AND set it up for canning.  Be sure to stop by to take a look.

Artisans Gallery & Café is proud to offer our signature house coffee "Artisans", roasted locally by One Village; our freshly brewed iced coffee & iced tea,  & Harney Specialty Teas.  We selected One Village as our roaster for our "exclusively blended "Artisans" coffee which is served and sold only at our café.  The folks at One Village believe that "delivering the freshest coffee while maintaining a low carbon footprint is important to us so we limit ourselves to locations within 500 miles from our headquarters".   OV 12 oz. Everyone knows how great Bison burgers, steaks, sausages, and hot dogs are on the grill, but sometimes you need an easy meal for those crazy days.  Our chuck roasts are lean, and easy to cook in a croc-pot.   Start them in the morning on low, and they are ready for dinner when you are ready for dinner.  They are full of flavor and just fall apart with a fork, and it does not heat up the kitchen on those hot summer days.

Deep Roots Valley Farm
This week we will be debuting a few new cuts of chicken including the much requested split breast!  We'll have plenty of pasture raised/gmo free eggs, chicken and beef so be sure to stop by!

This weeks fresh chickens should be 5+lbs.  If you would like out bulk special please let us know in advance (30lbs of whole chicken for $100, 60 lbs for $195).  Don't forget we have frames, necks and feet available for making stock!

Due to the universal rising cost of meat, Forks Farm has raised the price of our CHICKEN and BEEF. We have tried to make a small an increase as possible to remain sustainable and affordable. Our prices are STILL less than most conventional market meat.

Mixed Greens with Raisins and Pine Nuts

Ingredients
2-3 TBsp melted and lightly browned butter
1TBsp raisins
1/4 cup hot water
About 2 lbs greens(Swiss chard, green kale,
black kale, collards, Russian kale, spinach)
2 TBsp EV Olive oil
2 garlic cloves minced
1/4 cup water
Sea salt & freshly ground black pepper
2 TBsp toasted pine nuts

Cover raisins in hot water to plump them

Wash greens, remove thickest part of lower stems and chop about 1/2 of them into small pieces, (reserve the rest for broth, or the compost pile.

Roll leaves of greens(except spinach) and slice them in thick ribbons, keeping collards greens separate .

Cut spinach into slices, keep separate.

Dry greens lightly in salad spinner or towel.

In a large sauté pan, heat the oil, add stems, garlic, water, and a pinch of salt & pepper.

Sauté over medium heat about 1 minute .

Add collards, using metal tongs to toss, sauté
about 1 more minute, add kale and repeat, add chard, 1/4 tsp. salt and some pepper toss over medium heat 2-3 minutes until greens are crisp tender.

Lower heat, add spinach, drained raisins, pine nuts and butter, cook 'til spinach is just wilted, taste for seasoning, pour into a dish, drizzling pan juices over top.

Light Strawberry Jam

Ingredients

4 cups crushed strawberries
1 cup unsweetened white grape juice
3 Tbsp Ball® RealFruit® Low or No-Sugar Needed Pectin
6 (8 oz) half pint glass preserving jars with lids and bands

Directions:
1.) PREPARE boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside.
2.) COMBINE strawberries and juice in a 6- to 8-quart saucepan. Gradually stir in pectin. Bring mixture to a full rolling boil that cannot be stirred down, over high heat, stirring constantly. Remove from heat. Skim foam if necessary.
3.) LADLE hot jam into hot jars leaving 1/4 inch headspace. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight.
4.) PROCESS filled jars in a boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check for seal after 24 hours. Lids should not flex up and down when center is pressed.
